(566) Creamy Avacado Dip

Avocados are rich in monounsaturated fats (good fats) that support heart health and keep you full for longer. Great for skin, hair and hormonal balance. One medium size(200-300 g.) Avocado provides 7–10 grams of fiber, supporting digestion and regularity. High potassium,  folate, Vitamin B and E supports brain functions. Very low in carbs so it won’t spike blood sugar level.

Ingredients

  • ¼ cup ripe Avacado pulp
  • ¼ cup hung curd.
  • 1 tbsp. Lemon juice or 1 cube of Lemon juice.
  • 1 tbsp. Finely chopped Mint leaves or 2 – 4 cubes of Mint chutney
  • ½ tsp. Salt
  • ½ tsp. Black pepper powder.

Method

  1. Wash and cut the Avacado into two halves.
  2. Scoop the pulp of Avacado and mash it in a bowl. Immediately mix lemon juice otherwise it turns brown.
  3. Whisk the hung curd till get smooth creamy consistency.
  4. Pour curd in Avacado bowl and mix thoroughly.
  5. Add remaining ingredients and again mix them thoroughly. If you are adding chutney cube then taste first and  if required then mix salt, pepper and lemon.
  6. Creamy Avacado dip is ready to serve.
  7. Serve it with Nachos, khakhra,grilled vegetables, sandwich spread or as you wish but serve with love and smile.

(508) Parsley Dip

Fresh Parsley is high in Vitamin K which supports bone health and blood clotting, It is a good source of vitamin C and A will increase immunity and improves eye and skin health. It Contains flavonoids like luteolin  apigenin which protect cells from oxidative damage and slows signs of aging. It helps in flushing toxins due to its diuretic nature, reduce inflammation.

Cucumber keeps you hydrated and helps in regulating body temperature, especially in hot climates. Potassium and magnesium in cucumber helps in manageing blood pressure. It also helps to neutralize excess acidity and maintain a healthy pH balance.

Ingredients

  • 1 cup Hung curd.
  • 2 tbsp. Finely chopped Parsley.
  • ½ medium sized Cucumber.
  • ½ tsp. Salt + ¼ tsp.for marination.
  • ¼ tsp. Black pepper powder.

Method

  1. Grate Cucumber with the help of cheese grater and marinate it with Salt and keep aside.
  2. Chop Parsley and keep aside.
  3. Beat hung curd till you get smooth consistency.
  4. Squeeze the marinated cucumber and mix in hung curd.
  5. Mix chopped Parsley, salt and Black pepper powder.
  6. Mix thoroughly and serve with Bread sticks, Khakra, French fries, Nachos, if t sticks or as you wish but serve with love and smile.

Ingredients

  • 2 medium size Avacado.
  • 1 – 2 sprigs Parsley OR 1 tbsp. Dry Parsley leaves (Optional)
  • 2 Lemons or 5 cubes of Lemon juice.
  • ¼ tsp. Salt.
  • 2 tbsp. finely chopped Tomatoes (optional)
  • 1 tbsp. finely chopped Onion.( Optional)
  • ¼ tsp. Chilli flakes ( optinal) OR  ¼ tsp. Black pepper powder.

Method

  1. Wash and cut the Avacado vertically into two halves.
  2. Scoop out the pulp and mash it with the help of fork or in the mixture grinder after adding lemon juice and Salt.
  3. Transfer the paste into the mixing bowl.
  4. Wash Parsley leaves, chop finely and mix it with Avacado paste or you can mix dry Parsley leaves.
  5. Mix it with chopped onions, tomatoes and black pepper or chilli flakes.
  6. Mix well and serve it with Nachos, Khakhra, Steamed or Grilled vegetables or as you wish but serve it with love and smile.

Both chutneys and dips are used as accompaniments to enhance the taste of food, they differ in origin, ingredients, preparation, and cultural use. Chutney is a traditional part of Indian meals for centuries. Often served with rice, roti, dosa, snacks, or even as a palate cleanser. Whereas Dips more common in Western cuisines (American, Maxican, Mediterranean,  etc.). Dips are served with chips, crackers, vegetables, or breads (like pita). Used as an appetizer, snack, or party food.

Chutneys are made from herbs (coriander, mint), fruits (mango, tamarind), vegetables (tomato, onion, garlic), spices, and sometimes jaggery or sugar. Usually includes strong spices like mustard seeds, cumin, hing, curry leaves, etc. Whereas Dips typically made with dairy (cheese, yogurt, cream), legumes (hummus from chickpeas), or condiments (mayonnaise, sour cream).Uses herbs like parsley, dill or paprika

Chutney can be spicy, tangy, sweet, or bitter. Sometimes it may be layered flavors due to roasting or tempering. Whereas Dips are generally mild, creamy, or cheesy. These are less spicy and complex in flavor.

(105) Tahini Paste.

Ingredients

  • ½ cup White Sesame seeds.
  • ¼ cup Olive oil.
  • ½ tsp. Salt.

Method

  1. Dry roast sesame seeds.
  2. After some times grind Sesame seeds when it is slightly warm.
  3. Grind into fine powder.
  4. Add salt and oil and again grind for getting smooth Tahini paste .
  5. Use Tahini paste for making salad dressing, hummus or as you desire.

(102) Cheese Dips

Ingredients

  • 2 tbsp. Butter.
  • 1 tbsp. All purpose flour.
  • 1 cup Milk.
  • ¼ tsp. Turmeric powder.
  • 1 cup grated cheese.
  • ¼ tsp. Salt.
  • ¼ tsp. Black pepper powder.

Method

  1. In medium sized sauce pan heat butter.
  2. Add flour and cook for 2 minutes to remove rawness of flour,
  3. Add milk and stir continuously until you will get thick sauce like batter.
  4. Add grated cheese and stir continuously.
  5. Switch off the flame when you will get nice shiny cheese sauce.
  6. Enjoy cheese dip with French fries, Garlic bread, Nachos or as you desire.

(97) Tomato ni chutney

Ingredients

  • 4 medium sized tomatoes.
  • ½ inch size ginger.
  • 2 green chilies.
  • ½ tsp. salt.
  • ½ cup mint leaves.

Method

  1. Wash tomatoes and cut into small pieces.
  2. Separate mint leaves from stalk and wash thoroughly.
  3. Peel ginger and cut into small pieces.
  4. Wash chilis and cut into small pieces.
  5. Mix all the ingredients and blend into smooth paste.
  6. Serve tomato chutney with chila, momos, muthiya, dhokla, vada, or as you desire.
  7. Serve with love and smile.

A) Achari dips

Ingredients

Method

  1. Churn hung curd with wooden or metal churner.
  2. Add athana no sambhar and again churn for 2 times.
  3. Achari dips is ready .Serve with Pizza, Nachos, Khakhra, Chila, Garlic bread or as your desire.

B) Farali dips

Ingredients

  • 100 gms Hung curd.
  • 1 tb.sp. coarse ground nut.
  • ½ tsp. salt.
  • ½ tsp. green chilli paste
  • ½ tsp. freshly cut coriander leaves.

Method

  1. Churn hung curd with wooden or metal churner.
  2. Add all the ingredients and again churn for 2 times.
  3. Farali dips is ready. Serve with Potato Chips, Banana Chips, Purple Yam Chips, Jackfruit Chips
