(362)Mula ni Salad

Reddish Salad

Ingredients

  • Reddish
  • 2 tsp. Lemon juice.
  • Pink salt.
  • ½ tsp. Black pepper powder ( optional)

Method

  1. Wash and peel the skin of reddish.
  2. Cut the reddish into thin slices and marinate it with salt, black pepper powder and lemon juice.
  3. Finely chop leaves of reddish and marinate it with salt and lemon juice.
  4. Before serving arrange reddish slices and leaves in a plate.
  5. Serve it with love and smile.

(361)Lila Lasan ni chutney

Green Garlic Chutney

Ingredients

  • 250 gms Green Garlic bunch.
  • 1 tsp Salt
  • 2 tbsp. Lemon juice.
  • 2 tbsp. Olive oil

Method

  1. Pluck roots and Garlic pods from the leaves.
  2. Discard roots.
  3. Wash Garlic pods and keep aside.
  4. Finely chop Garlic leaves. Wash it in wire mesh and keep aside.
  5. In a mixture grinder gather all the ingredients and then grind together into fine paste.
  6. Lemon juice will maintain the colour of the leaves and oil will trap the aroma of the garlic.
  7. Either fill this garlic chutney in ice tray or arrange the drops on steel plate
  8. I always want garlic paste in very small amounts so I am freezing in a steel plate.
  9. Grease steel plate with oil and drop ½ tsp. paste and arrange in a circular manner and freeze this plate for 8-10 hours.
  10. After 10 hours transfer these garlic drops into a steel container because the odour of the garlic will get infused in plastic and the container becomes smelly for a lifetime.
  11. You can consume it as a chutney or you can also use these cubes in your recipes in place of Garlic.

(351) Rasawali Lal chori with Onions.

Ingredients

  • ½ cup Red chori.
  • 3 Onions.
  • 1 tsp. Salt.
  • 2 Garlic cloves(optional)
  • 1 inch size Ginger piece.
  • 2 Green chillies.
  • 1 tsp Red chilli powder.
  • 1 tsp. Dhana Jeera powder.
  • ½ tsp. Turmeric powder.
  • 3- 4 Kokum.
  • Tempering ingredients
  • 2 tbsp. Oil, Mustard seeds, Asafoetida powder,6-7 Curry leaves, 2 tbsp. finely chopped Coriander leaves.

Method

  1. Wash lal chori 2 times, after adding 1 glass of water and salt, cook Chori up to 3 whistles in the pressure cooker.
  2. Simultaneously chop Onions and keep aside.
  3. If you are adding Garlic , then crush or grate Garlic pods and keep aside.
  4. Grate Ginger and chop chillies and keep aside.
  5. Heat oil in a tempering pan. Add Mustard seeds and wait for a cracking sound. Now add Asafoetida powder, curry leaves and then onion. Cook till translucent.
  6. Add Ginger, chillies and Garlic at this moment. Give a quick stir and add dry masala in it.
  7. Pour this tempering in cooked chori.
  8. Boil red chori after adding

(346) Nomato PavBhaji

No Tomatoes

Ingredients for cooking :

  • 6-7 Medium size Potatoes.
  • 1 whole Yellow Bell Pepper.
  • ½ Red Bell Pepper.
  • 1 cup Cauliflower florets.
  • ¼ cup Green Peas.
  • 250 gms. Cabbage.
  • 5-6 medium size Onions.
  • Ingredients for making paste :
  • 10-12 Garlic pods.
  • ½ red bell pepper.
  • 4-5 whole non spicy red chilles.
  • Spices :
  • 2 tsp. salt.
  • 1 tbsp. Red chilli powder.
  • 1 tbsp. Green Mango powder ( Aamchur)
  • 1 tbsp. Everest pavbhaji Masala.

Method

For cooking vegetables

  1. Peel the potatoes and cut into halves and keep aside into the pan filled with water. so that potatoes won’t turn black.
  2. Separates florets of Cauliflower and keep aside.
  3. Roughly chop cabbage and keep aside.
  4. Peel green peas and keep aside.
  5. Roughly chop yellow bell peppers and keep aside
  6. Chop one half of the red bell pepper and keep aside.
  7. In a pressure cooker heat 1 cup of water with 1 tsp salt and add all above vegetables in it. Cook up to 3 whistles.
  8. When pressure is released, open the lid. Strain water also known as vegetable stock keep aside for further cooking .
  9. Mash all vegetables with the help of potato masher and keep aside.
  10. Method for making paste.
  11. Half red Bell Peppers, non spicy red peppers and Garlic pods grind into fine paste. Please remove the seeds from the peppers before grinding.
  12. Method for making bhaji
  13. Finely chopped onions.
  14. Heat oil in a nonstick pan and saute onions till translucent.
  15. Add the paste of peppers and garlic and saute till rawness of the paste turns aromatic.
  16. Add salt, chilli powder, Pavbhaji masala and Aamchur powder. Saute for one more minute and add mixed mashed vegetables as well as vegetable stock.
  17. Add 2 tbsp. of butter in it.
  18. Close the lid and simmer for 3-4 minutes on slow flame.
  19. Serve hot with butter roasted pav. Accompany with a piece of lemon, papad or potato chips or banana chips or as you wish but serve with love and smile.

(337) Mango Waffle

Ingredients

  • 1 cup Aam ras.
  • 1 cup suji.
  • 2 tbsp. Ghee.
  • ⅛ tsp. Baking powder.
  • Date syrup for garnishing.

Method

  1. Mix ghee moin and baking powder with rawa.
  2. Now mix Aamras with rawa and keep aside for 10 minutes.
  3. Pour batter in preheated greased waffle maker.
  4. After 15 to 20 minutes Mango Waffle is ready to serve.
  5. Garnish with Maple syrup or honey or Date syrup and serve hot with love and smile.

(332)Farali Mix Flour

Either grind all four grains individually and mix flour according to your need or mix all four grains and then grind.

Ingredients

  • ¼ cup Sabudana.
  • ¼ cup Moraiyo.
  • ¼ cup Kutti daro.
  • ¼ cup Rajgira.
  • 1 tsp. Cumin.

Method

  1. Dry roast all ingredients together on a slow flame.
  2. When ingredients turn aromatic switch off the flame.
  3. After cooling grind it into coarse powder.
  4. Store in an air tight container for 15 days.

(288)Gajar ni Salad

Carrots Salad

Ingredients

  • Carrots (Gajar)
  • 1 tbsp Pomegranate seeds.
  • 1 tbsp.finely chopped Coriander leaves ( optional).
  • Chat Masala

Method

  1. Wash and peel carrots. Cut into thin slices and keep aside.
  2. Remove seeds from the Pomegranate and keep aside.
  3. Arrange carrot slices on the salad plate and sprinkle Pomegranate seeds and chat masala over it.
  4. Serve with Roti or Bhakhri, Paratha, Bajra roti, Ragi roti, Jowar Roti or as you wish but serve with Love and Smile

(280)Phudina Limbu Mari ni Sev.

Ingredients

  • 1 cup tightly filled Gram flour (Besan).
  • ¼ cup Rice flour.
  • ¼ cup Mint leaves (Phudina).
  • 2 spicy green chillies ( if you want spicy sev). (Optional)
  • Lemon juice.
  • 1 tsp. Black pepper powder.
  • ½ tsp. Chat masala.
  • ½ tsp. Salt.
  • ⅛ tsp. Asafoetida powder.
  • 30 ml. Oil.
  • 90 ml. water
  • Oil for frying.

Method

  1. In a mixture grinder make a paste of mint leaves. Filter the paste with tea strainer and keep aside.
  2. In a grinder jar churn water and oil together and you will get white colour liquid.
  3. Add all spices in this white liquid and again churn.
  4. Now add ¼ cup flour and churn. Repeat the process and in this way mix all flour in the jar and continuously churn for 2 minutes and you will get fluffy sev batter. (see video)
  5. Heat oil in kadhai.
  6. Fill the batter in sev machine after greeshing

(278)Mix Dal Dosa

Ingredients

Method

  1. In a saucepan mix all Dals and Rice together.
  2. Wash two times and fill the sauce pan with water to soak for 8- 10 hours.
  3. Grind it into coarse batter. See video for consistency.
  4. Heat nonstick tawa and spread ⅓ cup of batter evenly in a circular manner.
  5. Drizzle ghee or oil or butter and roast till golden brown.
  6. Give a single cut from the centre towards the periphery. Now lift from the cut and fold dosa. So you will get a crispy cone shape Dosa.
  7. Serve hot with Coconut chutney, Green chutney, Milega podi and Sambhar. Enjoy
