(117) Chhas Masala

Ingredients

Method

  1. Grind all the ingredients seperately .
  2. Store in separate air tight glass bottles.
  3. In one bowl mix all the ingredients for making chhas masala.
  4. Store chhas masala in air tight glass bottle.

(119) Mint leaves powder

Ingredients

1 cup fresh Mint leaves ( Phudina ) without stalk, washed and drained.

Method

  1. Spread evenly mint leaves on glass plate.
  2. In microwave select option of desi masala mix.
  3. Mint leaves dries in 3.20 to 5 or some times 6.40 minutes at 99⁰ temperature depence on thickness of leaves.
  4. Dried leaves grind it with the help of dry grinder.
  5. Strain it with tea strainer.
  6. Store this powder in air tight bottle for further use.

(118) Coriander leaves powder.

Ingredients

1 cup Coriander leaves washed and drained.

Method

  1. Spread evenly coriander leaves on glass plate.
  2. In microwave select option of desi masala mix.
  3. Coriander leaves dries in 3.20 minutes at 99⁰ temperature.
  4. Dried leaves grind it with the help of dry grinder.
  5. Strain it with tea strainer.
  6. Store this powder in air tight bottle for further use.

(113) White Dhokla from Idli Dosa batter

Ingredients

  • 1 kg. Boiled rice
  • ½ kg. Udad dal
  • 1 tbsp. Fenugreek seeds.

Method

  1. Soak 7-8 hours washed rice, dal, and Fenugreek seeds separately.
  2. After 8 hours drain off water from rice, dal and fenugreek seeds.
  3. Grind coarse batter of rice.
  4. Grind fine batter of dal and fenugreek seeds.
  5. Mix all thoroughly.
  6. Keep aside 5-6 hours for fermentation.
  7. After 6 hours add Salt, Soda or Eno sachet, Ginger and Green chili paste.
  8. Temper batter with 2 tbsp. Til oil, Mustard seeds, Asaphoitida powder and Curry leaves ( optional).
  9. Dhokla batter is ready . You can also use for making idli and dosa but consistency of all three ( dhokla, idli and dosa ) are different.

(112) White Dhokla flour.

Ingredients

  • White Dhokla  Flour :—
  • 1 kg. Parimal rice.
  • ½ kg. Udad dal.

Method

  1. Mix dry Rice and Dal.
  2. Grind with the help of grinder or atta chakki into coarse flour. You can store this flour for 3-4 months.
  3. Use this flour for making dhokla batter.

(104) Salsa Dips

Ingredients

  • 2 medium size Tomatoes.
  • 2 medium size Onions.
  • 2 Red whole Chillies
  • ½ inch Ginger piece.
  • 1 tbsp. Olive oil.
  • 2 tbsp. Finely chopped coriander leaves.
  • 1 tsp. Salt.
  • ½ cup mint leaves ( optional)
  • or
  • 2-3 Garlic pods( optional)

Method

  1. Pierced fork into washed tomatoes.
  2. Roast both tomatoes directly in medium flame.
  3. Remove skin of tomatoes. Cut into small pieces.
  4. Roughly chop onions.
  5. Coarsely grind all the ingredients.
  6. Serve Salsa Dips with Nachos, French fries, breadsticks, Khakhra, Namakpare or as you wish but serve with love and smile.
  7. Salsa coarse paste you can also use in franky.

(103) Garlic & Mix herbs butter

Ingredients

  • 1 cup Salted butter
  • 1 tsp.  finely chopped  fresh Parsley leaves.
  • 1 tsp. finely chopped fresh basil leaves.
  • 1 tsp. dry rosmerry powder.
  • 1 tsp.  finely chopped fresh Thyme.
  • 1 tsp. fresh garlic paste.

Method

  1. Allow butter to come at room temperature.
  2. Mix all the ingredients thoroughly.
  3. Store in refrigerator for 15 days and use in Sandwiches Pizzas, Burgers or as you desire.

( 106) Hummus

Ingredients

Method

  1. Soak Channa for 14 hrs.
  2. In cooker pan add soaked channa, 1½ cup water and 1 spoon salt.
  3. Cook Channa upto 5 whistles.
  4. After pressure is release, check by pinching few grains of channa . If mashed it means is properly cooked. If not then cook again upto 3 whistles.
  5. Strain cooked Channa and keep aside the strain water for later use.
  6. Grind cooked channa into fine paste and use strain water spoon by spoon for getting required consistency
  7. Add Garlic paste, Tahini paste, White pepper powder, Olive oil and lemon juice
  8. Mix all ingredients thoroughly in the mixture .
  9. Store in a dry container in the refrigerator and consume within 2- 3 days.

(105) Tahini Paste.

Ingredients

  • ½ cup White Sesame seeds.
  • ¼ cup Olive oil.
  • ½ tsp. Salt.

Method

  1. Dry roast sesame seeds.
  2. After some times grind Sesame seeds when it is slightly warm.
  3. Grind into fine powder.
  4. Add salt and oil and again grind for getting smooth Tahini paste .
  5. Use Tahini paste for making salad dressing, hummus or as you desire.

(102) Cheese Dips

Ingredients

  • 2 tbsp. Butter.
  • 1 tbsp. All purpose flour.
  • 1 cup Milk.
  • ¼ tsp. Turmeric powder.
  • 1 cup grated cheese.
  • ¼ tsp. Salt.
  • ¼ tsp. Black pepper powder.

Method

  1. In medium sized sauce pan heat butter.
  2. Add flour and cook for 2 minutes to remove rawness of flour,
  3. Add milk and stir continuously until you will get thick sauce like batter.
  4. Add grated cheese and stir continuously.
  5. Switch off the flame when you will get nice shiny cheese sauce.
  6. Enjoy cheese dip with French fries, Garlic bread, Nachos or as you desire.
