(367)Dill Greens/Seeds Tea

Dill is an annual herb where its leaves and seeds are used as a herb or spice for flavouring foods. It contains Vitamin C which boosts the immune system. It is a good source of Calcium helps to prevent bone loss and decrease bone density. It ló la in digestion and reduces blotting. Dill’s flavonoids have anti inflammatory and antioxidant properties that help to keep the heart healthy. It lowers down cholesterol. It also contains Vitamin A so it is important in vision, growth and reproduction. Dill seeds contain enzymes which act as a sedative and help in insomnia.

Ingredients

  • 8-10 Dill Greens or 1 tsp. Dill seeds
  • 500 ml. water.

Method

  1. Heat water in a sauce pan.
  2. Add either Dill’s green or seeds in water.
  3. Boil for 5 minutes and strain.
  4. Serve hot with love and smile.

(366)Palak Paneer Rice

Ingredients

  • 1 cup Basmati rice.
  • 2 cups finely chopped Spinach.
  • 200 gms Paneer cut into ½ cm cubes.
  • 2 finely chopped Onions.
  • ¼  cup finely chopped Coriander leaves
  • 1 tsp. Salt.
  • ½ tsp. Black pepper powder.
  • 1 tbsp. Lemon juice.
  • 1 tsp. Desi ghee.
  • Tempering Ingredients
  • 2 tbsp. Oil
  • 1 tsp. Cumin seeds.
  • ¼ tsp. Asafoetida powder.
  • 2 whole or finely chopped Green chillies.
  • 8- 10 Curry leaves.

Method

  1. Wash and soak rice in 4  cups water for 30 minutes.
  2. Wash and finely chop Spinach leaves and keep aside.
  3. Wash and finely chop Coriander leaves and keep aside.
  4. Wash and chop paneer into desirable sizes and keep aside.
  5. Heat the water used for soaking rice into a sauce pan.
  6. Add rice in it when water starts boiling.
  7. Add ½ tsp. Salt in it and cook till tender on medium flame.
  8. Once the rice is cooked, transfer it into a sieve to discard excess water. keep aside.
  9. Simultaneously heat oil in a nonstick pan and add Cumin seeds.
  10. Wait for the crackling sound and add Asafoetida powder, green chilli and Curry leaves in it.
  11. Add chopped onion and saute till translucent.
  12. Now add chopped spinach and saute till it becomes tender.
  13. Add Coriander leaves, Paneer cubes and salt in it Mix thoroughly and switch off the flame.
  14. Now add cooked rice, ghee and lemon juice in the pan and mix thoroughly.
  15. Serve hot Palak Paneer Rice with Kadhi or Any Soup from the index or as you wish but serve with love and smile.

(365)Lemongrass Tea

Lemongrass is a tall grass like plant. It tastes citrusy and has a fresh lemony flavour. It has antibacterial properties. Chlorogenic acid, Isoorientin and swertia japonica are main antioxidants.  It also helps in digestion and regulates blood sugar. It also boosts metabolism and as an excellent source of Vitamin A and C which are essential nutrients for beautiful skin and hair

Ingredients

  • ½ cup lemongrass.
  • 2 cup water.
  • 1 tsp Lemon juice( optional)

Method

  1. Heat water in a sauce pan.
  2. Add lemon grass in water.
  3. Boil for 10 minutes and add lemon juice after the temperature of the water reduces (hot water reduces the vitamin C contents present in the lemon )
  4. Serve Lemongrass Tea with love and smile.

(364)Chana dal Chilla

Ingredients


  • 3 cups Chana dal( Bengal gram).
  • 1 cup finely chopped Spinach.
  • ½ cup finely chopped Spring onion.
  • ½ cup grated Cucumber.
  • ½ cup curd.
  • ½ cup Rice flour.
  • 1 tbsp. White sesame seeds.
  • 1 tsp. Salt.
  • ½ tsp. Cumin Coriander powder ( DhanaJeera)
  • ½ tsp. Red chilli powder.
  • ¼ tsp. Turmeric powder.
  • ¼ tsp. Garam masala.
  • ⅛ tsp. Asafoetida powder.
  • 2 Green chillies.
  • 1 inch Ginger piece.

Method

  1. Wash Chana dal for 2-3 times and soak overnight or for 8-10 hours.
  2. Grind soak Chana dal into fine paste.
  3. Mix rice flour and curd as well as leafy vegetables. Adjust the consistency by adding water.
  4. Now add all spices and mix thoroughly.
  5. Heat non stick dosa tawa and spread the batter in a circular manner with the help of a laddle.
  6. As we added green leafy vegetables so thin chila won’t be possible. So make it slightly thick like uttapam.
  7. Serve hot Chana dal chila with Green chutney, Red sweet chutney and Pumpkin Carrot Tomato soup or as you wish but serve with love and smile.

(363)Bhinda ni kadhi

Ingredients

  • 4 cups Kadhi
  • 250 gms Lady fingers.
  • 1 tbsp. oil
  • ½ tsp. Salt.
  • ½ tsp. Turmeric powder.

Method

  1. Wash and wipe all lady fingers and chop into ½ inch size dices.
  2. Heat oil in a nonstick pan, cover the lid and saute lady fingers on a slow flame.
  3. Stir occasionally and cook till it becomes tender.
  4. Add salt and turmeric powder in it.stir one more time and switch off the flame.
  5. Simultaneously prepare kadhi also.
  6. Mix cooked lady fingers and kadhi and give one more boil to Bhinda ni kadhi.
  7. Serve with Paratha, Bhakhri or rice and khichadi. But serve it  with love and smile.

Reddish Salad

Ingredients

  • Reddish
  • 2 tsp. Lemon juice.
  • Pink salt.
  • ½ tsp. Black pepper powder ( optional)

Method

  1. Wash and peel the skin of reddish.
  2. Cut the reddish into thin slices and marinate it with salt, black pepper powder and lemon juice.
  3. Finely chop leaves of reddish and marinate it with salt and lemon juice.
  4. Before serving arrange reddish slices and leaves in a plate.
  5. Serve it with love and smile.

(361)Lila Lasan ni chutney

Green Garlic Chutney

Ingredients

  • 250 gms Green Garlic bunch.
  • 1 tsp Salt
  • 2 tbsp. Lemon juice.
  • 2 tbsp. Olive oil

Method

  1. Pluck roots and Garlic pods from the leaves.
  2. Discard roots.
  3. Wash Garlic pods and keep aside.
  4. Finely chop Garlic leaves. Wash it in wire mesh and keep aside.
  5. In a mixture grinder gather all the ingredients and then grind together into fine paste.
  6. Lemon juice will maintain the colour of the leaves and oil will trap the aroma of the garlic.
  7. Either fill this garlic chutney in ice tray or arrange the drops on steel plate
  8. I always want garlic paste in very small amounts so I am freezing in a steel plate.
  9. Grease steel plate with oil and drop ½ tsp. paste and arrange in a circular manner and freeze this plate for 8-10 hours.
  10. After 10 hours transfer these garlic drops into a steel container because the odour of the garlic will get infused in plastic and the container becomes smelly for a lifetime.
  11. You can consume it as a chutney or you can also use these cubes in your recipes in place of Garlic.

Dhana Pani

Coriander seeds are rich antioxidants . As seeds are diuretic in nature Coriander tea flushes out excess Sodium and Water. Due to its anti inflammatory property it reduces inflammation.

Active components present in Coriander seeds are Terpinase, Quercetin and Tocophenol which helps as follows

  • It reduces anxiety.
  • It boosts appetite.
  • It lowers blood pressure.
  • It lowers cholesterol.
  • It also does wonders in thyroid.

Ingredients

  • 2 cups Water.
  • 1 tbsp. Coriander seeds.

Method

  1. Heat water in a sauce pan.
  2. Add Coriander seeds in it and boil it for 10 minutes on a slow flame.

( 359) Smoothie Ideas.

Smoothie is a beverage made by crushing ingredients like vegetables, fruits, condiments with some millets blended with water or yoghurt or sometimes with milk. Smoothies are healthy breakfast and sometimes it becomes the best whole day and all days meals in a weight loss journey.

Tips :-

If you are using Oats, Puffs of Amaranth, Cornflakes or Rice flakes always dry roast first and then grind into smooth powder. This has to be stored in an airtight container.

If you are not using organic vegetables and fruits then peel vegetables and fruits before blending them into a smoothie.

Always soak dryfruits overnight or for 5-6 hours in water. So that it becomes easy to digest and blends smoothly.

  1. Cucumber smoothie:- ½ cup cucumber + 1 tbsp melon seeds + 8-10 Curry leaves + 1 tbsp Coriander leaves + 8-10 Mint leaves + 1 tbsp. Flex seeds + 200 ml. cold water. Blend Blend and Blend.
  2. Melon Smoothie:-½ cup Melon + ¼ cup roasted Oats + 4 soaked Almonds + 2 tsp. Honey + 200 ml. cold water. Blend Blend and Blend..
  3. Strawberry Smoothie:- 6 strawberries + 4 soaked Almonds + 4 soaked Dates + 1 tsp. Pumpkin seeds + 1 tsp. Chia seeds + ¼ cup roasted Oats + 200 ml. cold water. Blend Blend and Blend.
  4. Banana Smoothie :- 2 Bananas + ¼ cup roasted Oats + 4 soaked Cashews + 1 tsp. Coco powder + 2 tsp. Honey + 200 ml. cold water. Blend Blend and Blend.
  5. Papaya Smoothie :- ½ cup Ripe Papaya + ¼ cup roasted Oats + 2 soaked walnuts + 2 tsp. Honey + 200 ml. cold water. Blend Blend and Blend.
  6. Green Apple Smoothie :- ¼ cup Green Apple + ¼ cup Cucumber + ½ tbsp chopped Celery stalk + ¼ tsp. finely chopped Ginger + 1 tsp. Lemon juice + 8- 10 Baby Spinach leaves + ¼ tsp. Rock salt + 200 ml. cold water. Blend Blend and Blend.

  3. Strain and serve hot with love and smile. To enhance the taste of the tea you can add honey and a few drops of lemon juice in it.
