(224)Celery na Bhajiya

Ingredients

  • 250 gms. Celery.
  • 1 cup Chana dal  flour.
  • ½ cup Rice flour.
  • 2- 3 Finely chopped Green Chillies.
  • 1 tsp. Red chilli powder.
  • ¼ tsp. Turmeric powder.
  • ¼ tsp. Asafoetida powder.
  •   Pinch of Soda bi carb.
  • 1 tsp. Salt.
  • 1 ½ cup+ 1 tbsp. Water.
  • Oil for frying.

Method

  1. Pluck all the leaves from Celery.
  2. Wash stalks as well as leaves thoroughly and spread leaves on kitchen nepkin .
  3. Finely chopped tender stalks and ½ cup leaves and keep aside. Remaining leaves keep aside.
  4. In a mixing bowl mix both the flours, spices and soda and make a smooth batter with the help of water. Adjust the consistency by adding more water ( see video).
  5. Add finely chopped leaves and stalks . Mix thoroughly.
  6. Heat oil in kadhai on a fast flame.
  7. Once oil heat check it by dropping 2- 3 drops of batter . If drops come immediately on the surface of the oil  it means oil is ready for frying bhajia but if drops sit at the bottom it means still you have to heat the oil.
  8. Dip 2-3 leaves at a time in batter and then drop it in oil. Fry till golden brown. Repeat the process till frying is completed. Sprinkle chat masala on bhajia.
  9. Serve hot Celery bhajia with Sweet chutney and Green chutney. Tomato ketchup

(221)Khaman Dhokla

Ingredients

  • 2 cup Chana dal.
  • 3 Green chillies.
  • 2 inches long Ginger piece.
  • 2 tsp. Salt.
  • ¼ tsp. Asafoetida powder.
  • ¼ tsp. Turmeric powder.
  • 1 Eno fruit salt sachet.
  • 2 tbsp. Oil.
  • Tempering Ingredients : 4 tbsp. Oil, ¼ tsp. Mustard seeds, 1 tsp. White Sesame seeds, 8 – 10 Curry leaves, 4 finely chopped Green Chillies, 4 tbsp. water, 2 tsp. lemon juice and 2 tsp. Sugar.
  • For Garnishing 1 tbsp. grated fresh Coconut and 1 tbsp. chopped Coriander leaves.

Method

  1. Soak Chana dal for 8- 12 hours
  2. Make a fine paste of chillies and Ginger.
  3. After 12 hours wash Chana dal for 2 times and in the same mixture jar make a coarse batter of Chana dal.
  4. Adjust the consistency by adding water.
  5. Empty Eno sachet and mix thoroughly but slowly so that air won’t escape from batter. Pour batter in pre-greased thali.
  6. In a big kadhai heat water . Once it starts boiling place dhokla thali on stand in the kadhai. Close the lid and steam for 15 minutes.
  7. After 15 minutes open the lid of kadhai, pierce the knife tip, take out the knife and check. If the tip of the knife comes out clean, it means dhokla is properly steamed. If not again steam for 3 – 5 more minutes .
  8. Take out dhokla thali from kadhai and keep aside . After 5 minutes cut dhokla into square shapes. Keep aside.
  9. Heat oil into a big nonstick pan. Add Mustard seeds and wait for crackling sound after that add sesame seeds, curry leaves and green chillies.
  10. Stir continuously and saute for 30 seconds and add water and sugar.
  11. When water starts boiling, add lemon juice and then dhokla pieces.
  12. Toss quickly and continuously so that all dhokla pieces are easily mixed with tempering. Switch off the flame.
  13. Serve hot with Green chutney, after garnished with coriander and coconut. Accompanied with a glass of chaas, masala tea, Immunity booster tea, herbal tea or as you wish.

Eggless Omlette

Ingredients

  • 1 cup Besan( Bengal gram dal flour).
  • ¾ cup water.
  • ½ cup finely chopped vegetables (Onions, tomatoes, coriander).
  • 1 tsp. ginger chilli paste.
  • 1 tsp. Turmeric powder.
  • 1 tsp. Red chilli powder.
  • 1 tsp. Coriander Cumin powder.
  • ¼ tsp. Asafoetida powder.
  • 1 ¼ tsp. Salt.
  • 1 tsp. backing Powder.

Method

  1. Finely chop coriander leaves , tomatoes, onions and keep aside.
  2. In big mixing bowl mix chopped veges and besan.
  3. Mix all spices and adjust the consistency by adding water. Taste the batter before any further process.
  4. Keep aside for 10 minutes .
  5. Heat nonstick tawa, pour ¾ cup batter and spread evenly ¼ cms. thick in circular motion.
  6. Pour melted butter at the periphery and ½ tsp. butter at the top of chila.
  7. Close the lid and cook for 2 minutes or till it is golden brown.
  8. Flip the side of r1 chila, close the lid and again cook for 2 minutes.
  9. Enjoy besan chila or eggless Omlette with bread , tomato sauce, green chutney or with Golkeri or amla murabba or as you wish

(128) Batata Vada

Ingredients

  • 1Kg Potatoes.
  • 1 cup finely chopped coriander leaves.
  • 4 Green chili finely chopped or paste.
  • 2 inch size Ginger paste.
  • 2 tbsp. Lemon juice.
  • Oil for frying.
  • 1 cup besan for making batter.
  • Salt.
  • 1 tsp. red chili powder for batter.
  • ¼ tsp. Asafoetida powder for batter.

Method

  1. Wash and pressure cook Potatoes upto 3 whistles.
  2. When pressure gets released open the lid .
  3. Peel each potato and mash immediately when it is hot otherwise pulp will remain granular.
  4. Make a fine paste of green chilies and ginger. Add this paste to potato pulp.
  5. Add coriander leaves and lemon juice and mix lightly and make table tennis size balls.
  6. For making batter take gram flour ( besan) in one sauce pan .
  7. Add salt, red chili powder, asafoetida and oil .
  8. Mix all ingredients and make thick flowing consistency batter.
  9. Pick one ball of batata vada , dip in batter and fry in hot oil.
  10. Fry till golden brown and serve hot vada with green chutney, red sweet chutney , garlic chutney and bread

(124) Kanda na Bhajiya

Ingredients

  • 4 medium size Onions.
  • ¼ cup rice flour.
  • 1- 2 cups besan depends on the quality of onion.If onion is fresh and juicy then require more besan compare to old and desiccated onion.
  • 1 tsp. Salt.
  • 1 tsp. Red chili powder.
  • 1 tsp. Coriander-Cumin powder.
  • ¼ tsp. Asafoetida powder.
  • 2 tbsp. Finely chopped coriander leaves.
  • 2 Green chilies finely chopped (optional)
  • ½ tsp. whole coriander seeds.
  • Groundnut oil for frying.

Method

  1. Cut onions into long slices.
  2. Marinate cut onion with salt . Knead onion for 1 minute . Keep aside for 10 minutes. Water release from onion.
  3. Coarse ground coriander seeds with the help of your two palms.
  4. Add remaining ingredients and mix thoroughly with onions.
  5. Add besan as well as rice flour and mix lightly in onions with the help of your fingers.
  6. Heat oil in kadhai for frying.
  7. Fry kanda bhaji in oil.
  8. Serve kanda bhaji with 2 slices of bread or with pav and Green Chutney,Red Chutney, Garlic Chutney.

Eggless Omlette

Besan Chila

Besan Pudla

Serves 4 Omlette.

Ingredients

  • 1 cup tightly filled chickpeas flour ( besan)
  • ¼ cup All purpose flour (maida)
  • ½ tsp. Salt.
  • ½ tsp.turmeric pd.
  • ½ tsp.red chilli powder.
  • Pinch of Asafoetida.
  • ½ tsp. Baking soda
  • ¾ cup water.
  • Oil for drizzling.

Method

  1. In one big mixing bowl sieves all dry ingredients.
  2. Slowly add water and make sauce like batter.
  3. Heat a lightly greased griddle.
  4. Pour the 1/4 cup batter onto the griddle and spread it evenly in circular manner.
  5. Drizzle oil at the edges and allow to cook till golden.
  6. Flip the Omlette and cook other side.
  7. Enjoy your eggless Omlette with red chutney and green chutney.
  8. You can also add finely chopped onion,tomatoes, green chillies, coriander leaves which will enhance the taste.
  9. On nonstick tawa you can make this without oil so it will becomes best food in Jaundice and for weight loss .

(34) Bhakhri

Make 8 bhakhri

Ingredients

  • 2 cup Wheat flour
  • OR
  • 1½ cup wheat flour+ ½ cup suji
  • OR
  • 1½ cup wheat flour+ ½ cup sieved lapsi flour.( lapsi flour is coarsely ground wheat flour like semolina- suji. Coarse whole wheat flour commonly known as ”jada atta” or ”churma lapsi atta”
  • ½ tsp. salt.
  • 60 ml. oil.
  • or
  • 4 tbsp oil.
  • 175 ml water.
  1. In mixing bowl mix all ingredients and knead a stiff dough. Keep aside for 10 -15 mins.
  2. Smear with little ghee and again knead to a smooth dough.
  3. Divide the dough into 8 equal portions.
  4. Roll  each dough ball into flat , round bhakhri.
  5. Preheat tawa on a medium flame.
  6. Roast both the sides,apply little ghee and press gently with wooden press till it turns light golden brown.
  7. Enjoy bhakhri with any vegetable curry, Jeggary and pickle.
  8. You can use bhakhri as pizza base and instead of slice bread in sandwiches.

(18)Sweet chutney

Red chutney, Khajur Amli chutney

Ingredients

  • 500 gms. Red Dates.( lal khajur)
  • 100 gms. Tamarind (Imli)
  • 250 gms. Jaggery (Gud)
  • 2 tbsp. Salt.
  • ¼ tsp. Asafoetida (Hing).
  • 2 tbsp. Coriander Cumin powder.
  • 2 tbsp. Red chilli powder.

Method:

1) Wash khajoor and imli

2) In steel vessel add all ingredients and 2 bowl (200 ml) water and pressure cook upto 4 whistles

3) After cooker cools down, deseed khajoor and imli.

4) Transfer all the ingredients in grinder and make a smooth paste of pouring consistency. Strain this mixture with the help of strainer.

5) Boil this chutney mixture for 5 mins.stir continuously.

6) After tasting chutney ,bottle it in air tight container or make a cubes in pop up ice tray.

7) If you keep in fridge, chutney will taste good upto 1 month. Chutney cubes in freezer lasts for 3 months.

8) Enjoy your sweet chutney with chats,vada,pakoda,chilla etc.

serves 16 chillas

Ingredients

2 bowl (300 gms.) chanadal flour (chickpea)

1 bowl (150gms.) chawal ( rice) flour.

1/4 tsp Ajwain(carom seeds)

1/4 tsp. Haldi(turmeric)pd

1 tsp dhania jeera( coriander cumin) pd.

1and 1/2 tsp salt

1 tsp. lal mirch( red chilli) pd.

1 tsp kala miri( black pepper) pd.

Method:

1) In one mixing bowl take both atta and all spices.

2) Add 2and 1/2 bowl water in it and mix thoroughly so no lumps.

3) keep aside for 30 mins.

4) Check the batter,must be pouring consistency.Start making chillas (dosa)

5) Serve hot with any Soup,green chutney and red chutney. Serve with love and smile.

6) while making chilla,you can sprinkle shredded cheese.

7) You can also add finely chopped onion, tomatoes, capsicum and finely chopped coriander in chilla batter.
