(126) Rasam

Ingredients

  • 750 ml. water.
  • ½ cup Lentils. (Tur dal)
  • 4 Tomatoes.
  • 2 tbsp. Rasam powder.
  • 1 tbsp. finely chopped coriander leaves.
  • 1 tsp. Ginger paste.
  • 1 tsp. Green chili paste.
  • ½ tsp.Turmeric powder.
  • ½ tsp. Red chili powder.
  • ½ tsp. Coriander Cumin powder.

Tampering ingredients

  • 2 tbsp. Til oil.
  • ½ tsp. Cumin seeds.
  • ¼ tsp. Mustard seeds.
  • ¼ tsp. Fenugreek seeds.
  • 8-10 Curry leaves.
  • ⅓ tsp. Asafoetida powder.
  • 2 whole red chilies.

Method

  1. Wash dal twice and cook upto 3 whistles.
  2. Pierce fork in tomato and hold it with fork in flame.
  3. Roast all 4 tomatoes and remove burnt skin of the tomatoes.
  4. Make a pulp of the tomatoes and keep aside.
  5. After pressure is released, open the lid and churn the dal with the help of churner.
  6. In sauce pan mix dal, pulp of tomatoes and all other ingredients .
  7. Again churn with the churner and keep the sauce pan on gas stove .
  8. After 2-3 boils turn the stove on slow flame.
  9. Simultaneously heat oil in tadka pan.
  10. Add Mustard seeds and wait for crackling sound. Add Fenugreek seeds
  11. Add Cumin seeds, Asaphoitida powder, Curry leaves and dry whole red chilies.
  12. Pour tadka in Rasam and give one more boil . Turn off the flame.
  13. Add Coriander leaves and serve hot.
  14. Serve with Moongdal Vada or Udad dal Vada or Handvo along with Coconut Chutney.
  15. Serve with love and smile.

(66) Valor nu shak

Dry vegetable Gujarati style.

Ingredients

  • 250 gms valor.
  • 2½ tbsp. oil.
  • ¼ tsp. Asafoetida.
  • 2 tsp. Salt.
  • 2 tsp. Sugar.
  • ½ tsp. Turmeric powder (Haldi).
  • 2 tsp. Coriander- Cumin powder (Dhanajeera).
  • 1 tsp. Red chili powder (mirchi).
  • ⅓ cup water.
  • ½ cup coconut (optional)
  • ⅓ cup fresh chopped coriander leaves.
  • 1 tsp.ginger paste.
  • 1 tsp.green chili past

Method:

  1. Firstly rinse 250 grams flat beans (valor papdi) very well. Then string each flat bean and pull the pods apart. You have to open the pods to see if there are worms or mould in them. Discard the beans if they have a mould or worms in them.
  2. Chop or break each pod into 4-5 parts.
  3. In pressure cooker take oil and add asafoetida , chopped valor,water,salt,sugar, turmeric powder,chili powder, coriander cumin powder, chopped coriander leaves,ginger and chili paste.
  4. Cover the pressure cooker lid without mixing all ingredients.
  5. Cook valor shak upto 3 whistles.
  6. Once cooker cool down , open the lid and check valor papdi and seeds of valor are cooked or not before mixing .
  7. If cooked then mix thoroughly and again cook on fast flame for one minute to reduce remaining water in the shak.
  8. Enjoy valor nu shak with Fulka roti ,Bajri roti,Bhakhri or Paratha, Tur dal , Moongdal dal or Masoor dal and steamed rice.

(38) Steamed Rice

Serves 2

Ingredients:

  • 8 tbsp. Basmati rice.
  • 4 cups water.
  • 2 Cloves.
  • 1 Bay leaf.
  • 1 tsp. Salt.
  • 1 tbsp.ghee.

Methods:

  1. Soak washed rice for 30 mins.In one deep sauce pan add 4 cups of water and boil it.
  2. Drain water from rice after 30 mins.
  3. Add cloves,salt , bay leaf and rice in boiling water.
  4. As soon as it boils rapidly, reduce the flame to slow ,cover the pan and simmering for 10 mins.
  5. Turn off the flame, do not open the lid and let the rice set for 5 mins.
  6. Strain the rice with the help of strainer and mix ghee in it
  7. Serve hot with Rajma,Whole Masoor,Fried Dal or you can use this steamed rice in Biryani,pulao or Jeera rice.

(37) Fulka Roti

Make 12 fulkas

Ingredients

  • 1 cup Wheat flour
  • 1 tbsp.oil
  • 115 ml water
  • little oil for smoothing dough

Methods

  1. In one big mixing bowl mix all ingredients and knead dough.Keep aside for 30 mins.
  2. Apply little oil ,knead more and makes smooth dough.
  3. Divide dough into 12 equal portions.
  4. Roll one portion into flat round roti.
  5. Preheat tawa on slow flame roast one side of roti.
  6. Small bubbles appears then flip side of roti on tawa.
  7. Roast both sides of roti on flame .
  8. Apply ghee and serve with Vegetable curry, Dal , Salad, Pickle or as you want.

(34) Bhakhri

Make 8 bhakhri

Ingredients

  • 2 cup Wheat flour
  • OR
  • 1½ cup wheat flour+ ½ cup suji
  • OR
  • 1½ cup wheat flour+ ½ cup sieved lapsi flour.( lapsi flour is coarsely ground wheat flour like semolina- suji. Coarse whole wheat flour commonly known as ”jada atta” or ”churma lapsi atta”
  • ½ tsp. salt.
  • 60 ml. oil.
  • or
  • 4 tbsp oil.
  • 175 ml water.
  1. In mixing bowl mix all ingredients and knead a stiff dough. Keep aside for 10 -15 mins.
  2. Smear with little ghee and again knead to a smooth dough.
  3. Divide the dough into 8 equal portions.
  4. Roll  each dough ball into flat , round bhakhri.
  5. Preheat tawa on a medium flame.
  6. Roast both the sides,apply little ghee and press gently with wooden press till it turns light golden brown.
  7. Enjoy bhakhri with any vegetable curry, Jeggary and pickle.
  8. You can use bhakhri as pizza base and instead of slice bread in sandwiches.
