(124) Kanda na Bhajiya

Ingredients

  • 4 medium size Onions.
  • ¼ cup rice flour.
  • 1- 2 cups besan depends on the quality of onion.If onion is fresh and juicy then require more besan compare to old and desiccated onion.
  • 1 tsp. Salt.
  • 1 tsp. Red chili powder.
  • 1 tsp. Coriander-Cumin powder.
  • ¼ tsp. Asafoetida powder.
  • 2 tbsp. Finely chopped coriander leaves.
  • 2 Green chilies finely chopped (optional)
  • ½ tsp. whole coriander seeds.
  • Groundnut oil for frying.

Method

  1. Cut onions into long slices.
  2. Marinate cut onion with salt . Knead onion for 1 minute . Keep aside for 10 minutes. Water release from onion.
  3. Coarse ground coriander seeds with the help of your two palms.
  4. Add remaining ingredients and mix thoroughly with onions.
  5. Add besan as well as rice flour and mix lightly in onions with the help of your fingers.
  6. Heat oil in kadhai for frying.
  7. Fry kanda bhaji in oil.
  8. Serve kanda bhaji with 2 slices of bread or with pav and Green Chutney,Red Chutney, Garlic Chutney.

(57) Spicy Peanuts

Masala sing

Ingredients

  • 250 gms. good quality Peanuts.
  • 1 tbsp. ghee
  • 2 tsp. Salt.
  • 1 tsp. black pepper powder.
  • OR
  • 2 tsp. Farshan Mixture Masala

Method:

  1. In frying pan add ghee and heat it on slow flame.
  2. Add peanuts and roast it till it turns crunchy and aromatic. It will take 10-12 mins.
  3. Taste one piece ,if not crunchy then roast for few more mins.
  4. Turn off the flame and add either salt and pepper powder or farshan mixture masala.
  5. Enjoy as accompaniment with drinks,carry with you in tiffinbox for school, office or during traveling.

Same way you can roast Almonds, Cashews or any nuts of your choice and sprinkle spice powder.

(36) Masala  Namakpare

Masala Shakarpare

Ingredients

  • 3 cups wheat flour
  • 45 ml oil
  • 1 tbsp.salt
  • 1 tbsp.chilli pd.
  • 1 tsp.white sesame(safed til) seeds
  • 1 tsp.black sesame(kala til) seeds
  • 1 tsp.Cumin(Jeera)
  • ½ tsp. Carom(Ajwain) seeds
  • 280 ml. water
  • oil for frying

Method:

  1. In one big vessel mix thoroughly all ingredients and knead into semi stiff dough.Keep aside for 30 mins.
  2. Divide the dough into 10 equal parts and roll each part into flat round 2mm thick chapattis.
  3. Cut each chapati into several square or diamond shapes. Pierce each pieces with knife.
  4. Heat oil in kadhai. Deep fry all namakpare under slowest flame till it becomes golden brown. It will takes 4-5 mins.
  5. Filled all Namakpare in airtight container once it cool down completely. You can store Namakpare for 30 days.
  6. Enjoy Namakpare with masala tea,herbal tea,in breakfast, snacks or as you want. You can carry Namakpare during traveling or in offices and schools.

(21) Biscuit Chat/Puri Chat

Serves:4

Ingredients

16 Monaco biscuits/Jeera puri/salty puri

16 slices of tomato

16 slices of cucumber

Green chutney.

Red Sweet Chutney

tomato sauce

4 cheese slices (each cut it into 4 equal parts)

1 cup grated cheese

1 cup sev

Chat masala

Method:

1) Arrange all biscuits in one big dinner plate

2) Over each biscuit ,stake cheese, cucumber and tomato slice.

3) Top it up with green chutney,red sweet chutney and tomato sauce as much as you want.

4) Sprinkle sev and shredded cheese.

5) Enjoy biscuits chat with tea or as you like.

(13) Herbal Tea

Serves 2. 250 ml.each

Ingredients

water. 500 ml.

Basil(Tulsi) Leaves. 8-10

Lemon grass. 15-20 pcs

Mint (Phudina) Leaves 8-10

Ginger grated 1/2 inch

Method:

1) In one big vessel mix all ingredients and boil for 10 mins.

2) Herbal tea is ready. Add 2 tsp. honey(optional) and squeeze 1/2 lemon in 500 ml. tea.

3) Enjoy your herbal tea with some cookies, sweet shakarpare,salty biscuits, salty namakpare ,mathri or puri.
