(261)Ragi Chila

Ingredients

  • 1 cup Ragi flour.
  • ½ cup Udad dal flour.
  • 2  Carrots.
  • 1 Medium size Onion.
  • 2 tsp. Coriander leaves.
  • 1½ tsp. Salt.
  • 1 Green chilli
  • ½ tsp. Black pepper powder.
  • 7-8 Brocolli florets.
  • 1 ½ cup water.
  • Black Sesame seeds.
  • Ghee

Method

  1. Wash Brocolli florets and chop the upper green layer of broccoli and keep aside.
  2. Wash, peel and chop carrots as well as Onion into small pieces and add in the mixture jar.
  3. Add Green chilli, Salt and black pepper powder in the jar.
  4. Now make a smooth paste and both the flour  in this jar .
  5. Add water and mix all these in a jar by churning so that no lumps will form and you will get a smooth batter.
  6. Add chopped Coriander leaves in the batter and keep aside for 2 hours for better results but if you are in a hurry you can make chila  immediately but then add 1 or 2 tbsp. more water. So you will get soft chila.
  7. Heat non stick tawa, pour and  spread the batter evenly in a circular manner. Drizzle ghee and sprinkle Broccoli and black sesame seeds spread evenly on chila.
  8. Cook on a slow flame. It will take 4-5 minutes.
  9. Serve hot with Carrot Soup or tomato soup and Golkeri pickle.

(260)Jowar Chila

Ingredients

  • 1 cup Sorghum flour (Jowar).
  • 1 cup finely chopped Ajwain leaves Carom leaves.
  • Sesame seeds.
  • oil.
  • 1 tsp salt.
  • 1 tsp. Green chilli paste.

Method

  1. Pluck leaves from the stalk. Wash each leaf carefully and dry on the kitchen towel for 5 minutes. Chop finely and keep aside.
  2. In a mixing bowl mix jowar flour, salt, chilli paste and ajwain leaves together with the help of the hand. Knead the mixture before adding water so that aromatic oil from leaves will mix with flour which enhances the taste.
  3. Now by adding water make the required consistency of the batter(see video).
  4. Heat nonstick tawa, pour batter and spread the batter in a circular manner. Drizzle oil and sprinkle Sesame seeds, cook on a slow flame. It will take 3-4 minutes.
  5. Serve hot with either Coconut chutney or Golkeri pickle or Tomato ketchup or as you wish.

(219)Moong Salad

Ingredients

  • ½ cup Moong ( whole Green gram).
  • 4-5 Chopped Spring onions.
  • 1 Tomato ( optional).
  • ¼ cup Pomegranate seeds.
  • 1 tbsp. chopped Coriander leaves.
  • 1 tsp. Salt.
  • 1 tsp. Chat masala.

Method

  1. Wash moong and soak overnight.
  2. Next morning again wash and boil in salted water for 10 minutes.
  3. Strain boiled Moong. Moong water you can consume as it is by adding fresh lemon juice or use for making osaman.
  4. In a mixing bowl mix boiled Moong with remaining ingredients and mix thoroughly.
  5. Enjoy your Moong Salad with roti, paratha, khakhra, bhakhri or as you wish.

(215)Lal mogri ni Salad

Ingredients

  • 250 gms. Lal mogri.
  • 1 tsp. Salt
  • 1 tsp. oil .
  • 2 tbsp. Athana no sambhar(Pickle masala)
  • 1 tbsp. Lemon juice( fresh)

Method

  1. Wash and finely chop mogri. Marinate with salt and keep aside.
  2. After 5 minutes squeeze extra water.
  3. Heat oil, add mogri and saute for 2 minutes on a fast flame.
  4. Switch off the flame, add athana no sambhar and lemon juice. Mix thoroughly.
  5. Serve with roti, bhakhri, paratha, nan or as you wish. Serve with love and smile.

(254)Oats Chila

Ingredients

  • 1 cup oats coarse flour.
  • ⅓ cup Udad flour.
  • ¼ cup Barley flour or Wheat or Chana flour.
  • 1 Onion.
  • 1 Tomato.
  • 1 tsp Salt.
  • 1 tsp. Cumin seeds.
  • 1 tsp. Black pepper powder OR 1 tsp. Green chillies paste.
  • 2 cups of water.
  • Chat masala or Milagai podi

Method

  1. Grind Oats into coarse flour.
  2. In a saucepan mix all dry ingredients together. Either you make a paste of onion and tomato and mix in flour or finely chopped and keep aside .
  3. Make a thick batter ( see video) and keep aside for 10 minutes to set.
  4. After 10 minutes check the consistency of batter and if ok then start making chilas otherwise add water spoon by spoon and make desired consistency.
  5. Pour batter on non stick tawa and spread evenly in a circular manner. Drizzle ghee and cook on a slow flame for 4-5 minutes. Flip the side and now spread chopped onion, tomato and coriander evenly over it and sprinkle chat masala. Cook this side on a slow flame till it turns light golden brown. Generally it takes 4-5 minutes.
  6. Serve hot with Coconut chutney

(214)Lila Chana ni Salad

Ingredients

  • 250 gms. fresh Chana( vegetable)
  • 1 medium size Onion.
  • 1 medium size Tomato.
  • 1 tsp. Oil for saute.
  • ⅛ tsp. Asafoetida powder.
  • 1 tsp. Salt.
  • 1 tsp. red chilli powder.
  • ½ tsp. lemon juice.
  • 1 tbsp. finely chopped Coriander leaves.

Method

  1. Wash chana and keep aside.
  2. Heat oil, add Asafoetida powder and saute till chana becomes tender.
  3. Finely chopped onion and tomato and keep aside.
  4. In a mixing bowl mix thoroughly chana, onion, tomato, and all other ingredients.
  5. Serve with roti, paratha, bhakhri, nan or as you wish.

(213)Lila Mogri ni Salad

Ingredients

  • 250 gms. Green mogri.
  • 1 tbsp.Lemon juice.
  • 1 tsp. Salt.
  • 1 tsp. oil
  • ⅛ tsp. Asafoetida powder.

Method

  1. Wash and Chop Mogri into small pieces.
  2. Marinate with salt and keep aside for 5 minutes.
  3. Squeeze mogri and remove excess water from it.
  4. Heat oil, add Asafoetida powder and saute mogri for 2 minutes.
  5. Transfer the content into a serving bowl and mix lemon juice.
  6. Serve with Roti, bhakhri, paratha, Nan or as you wish.

Ingredients

  • 1 cup cooked sprouted matki.
  • ¼ cup Dadam Dana (Pomegranate seeds).
  • 2 finely chopped onions.
  • 2 finely chopped Tomatoes or 1 tbsp. fresh Lemon juice.
  • Pinch of Salt
  • Pinch of Red chilli powder.

Method

  1. In a mixing bowl mix thoroughly salt and chilli powder and lemon juice  in chopped onion.
  2. Now mix Dadam Dana and Cooked Matki.
  3. Serve with roti, bhakhri, nan, paratha or as you wish.

(211)Kamrakh ni Salad

Ingredients

  • 2 Kamrakh (star fruit)
  • Pinch of Salt.
  • Pinch of Red chilli powder.

Method

  1. Wash and cut five ridges of star fruit.
  2. Slice the fruits into thin slices,
  3. Sprinkle salt and red chilli powder.
  4. Serve either with other fruits or with meals.

(210)Amla Dadam nu Salad

Ingredients

  • 2 Amla( Goose berries)
  • ¼ cup Dadam Dana (Pomegranate).
  • 15-20 Phudina pan(Mint leaves).
  • No need to add salt otherwise ½ tsp. salt.

Method

  1. Chop Amla into very small pieces.
  2. Finely chop Phudina pan.
  3. Separate seeds from the Pomegranate.
  4. In a mixing bowl mix all ingredients.
  5. Serve with roti, bhakri, paratha, nan or as you wish.
