(356) Cinnamon Tea

Drinking Cinnamon ( Dalchini, Tj) water acts as an internal shower, helping to flush out toxins which we breath and ingest everyday.

Bioactive components in it are Eugenol, Cinnamaldehyde and Cinnamic acid which helps as follows

  • It promotes heart health.
  • Aids digestion.
  • Boost immunity.
  • Helps to regulate blood sugar
  • Reduce PCOS symptoms.
  • Improve fertility.
  • Regulate period cycle .

Ingredients

  • 2 cups water.
  • ¼ tsp. Cinnamon powder
  • 8-10 Holy Basil leaves.

Method

  1. In a sauce pan add 2 cups of water.
  2. Add Cinnamon powder and Holy basil leaves.
  3. Boil for 10 minutes on a slow flame.
  4. Strain and serve hot with love and smile. You can add honey and a few drops of lemon juice to enhance the taste.

(221)Khaman Dhokla

Ingredients

  • 2 cup Chana dal.
  • 3 Green chillies.
  • 2 inches long Ginger piece.
  • 2 tsp. Salt.
  • ¼ tsp. Asafoetida powder.
  • ¼ tsp. Turmeric powder.
  • 1 Eno fruit salt sachet.
  • 2 tbsp. Oil.
  • Tempering Ingredients : 4 tbsp. Oil, ¼ tsp. Mustard seeds, 1 tsp. White Sesame seeds, 8 – 10 Curry leaves, 4 finely chopped Green Chillies, 4 tbsp. water, 2 tsp. lemon juice and 2 tsp. Sugar.
  • For Garnishing 1 tbsp. grated fresh Coconut and 1 tbsp. chopped Coriander leaves.

Method

  1. Soak Chana dal for 8- 12 hours
  2. Make a fine paste of chillies and Ginger.
  3. After 12 hours wash Chana dal for 2 times and in the same mixture jar make a coarse batter of Chana dal.
  4. Adjust the consistency by adding water.
  5. Empty Eno sachet and mix thoroughly but slowly so that air won’t escape from batter. Pour batter in pre-greased thali.
  6. In a big kadhai heat water . Once it starts boiling place dhokla thali on stand in the kadhai. Close the lid and steam for 15 minutes.
  7. After 15 minutes open the lid of kadhai, pierce the knife tip, take out the knife and check. If the tip of the knife comes out clean, it means dhokla is properly steamed. If not again steam for 3 – 5 more minutes .
  8. Take out dhokla thali from kadhai and keep aside . After 5 minutes cut dhokla into square shapes. Keep aside.
  9. Heat oil into a big nonstick pan. Add Mustard seeds and wait for crackling sound after that add sesame seeds, curry leaves and green chillies.
  10. Stir continuously and saute for 30 seconds and add water and sugar.
  11. When water starts boiling, add lemon juice and then dhokla pieces.
  12. Toss quickly and continuously so that all dhokla pieces are easily mixed with tempering. Switch off the flame.
  13. Serve hot with Green chutney, after garnished with coriander and coconut. Accompanied with a glass of chaas, masala tea, Immunity booster tea, herbal tea or as you wish.

(220)Moola ni bhaji na Muthiya

Ingredients

  • 1 cup Moola ni bhaji(Leaves of Radish).
  • ¼ cup Coriander leaves.
  • ½ cup Suji.
  • ½ cup Moong flour or besan.
  • ½ cup Mix dal coarse flour( masoor, tur and moong dal) Optional.
  • 4 tbsp. Oil.
  • 1 ½ tsp. Salt.
  • 4 tsp. Sugar.
  • 1 tsp. Aamchur powder ( Mango powder).
  • 1 tsp. Dhana Jeera powder ( Coriander and Cumin seeds powder).
  • 1 tsp. Red Chilli powder.
  • ½ tsp Turmeric powder.
  • ¼ tsp. Asafoetida powder.
  • 1 tsp. Green chillies and Ginger paste.
  • Tempering Ingredients :- 4 tbsp Oil, 1 tsp. white sesame seeds, ½ tsp. Mustard seeds, 1 tbsp. Chopped Coriander leaves, 8-10 Curry leaves.

Method

  1. Pluck leaves from the Radish.
  2. Wash thoroughly and finely chop the leaves.
  3. Marinate with salt and sugar and keep aside.
  4. In a mixing bowl mix three flours and add oil in it . When mixed thoroughly with the oil, flour will hold the shape of the fist then the quantity of oil is proper else add little more oil .
  5. Mix all spices and marinated moola bhaji with flour and knead into soft dough. If required add a water spoon by spoon.
  6. Make muthiya with this soft dough ( see video).
  7. Pressure cooks up to three whistles.
  8. Once pressure is released from the cooker, take out all the muthia and keep aside.
  9. After 10 minutes cut into ½ cm. thick slices.
  10. Heat oil in a non-stick pan . Add mustard seeds and wait for crackling sound after that add all other ingredients and saute for ½ minute and add muthiya slices. Stir continuously and saute for 2 -3 minutes on a fast flame.
  11. Serve immediately with tomato ketchup or Sweet chutney and Green chutney accompanied with a glass of buttermilk, masala tea , Immunity booster tea , herbal tea or as you wish.

(57) Spicy Peanuts

Ingredients

  • 250 gms. good quality Peanuts.
  • 1 tbsp. ghee
  • 2 tsp. Salt.
  • 1 tsp. black pepper powder.
  • OR
  • 2 tsp. Farshan Mixture Masala

Method:

  1. In frying pan add ghee and heat it on slow flame.
  2. Add peanuts and roast it till it turns crunchy and aromatic. It will take 10-12 mins.
  3. Taste one piece ,if not crunchy then roast for few more mins.
  4. Turn off the flame and add either salt and pepper powder or farshan mixture masala.
  5. Enjoy as accompaniment with drinks,carry with you in tiffinbox for school, office or during traveling.

Same way you can roast Almonds, Cashews or any nuts of your choice and sprinkle spice powder.

(42) Vegan Omlette

Eggless Omlette

Besan Chila

Besan Pudla

Serves 4 Omlette.

Ingredients

  • 1 cup tightly filled chickpeas flour ( besan)
  • ¼ cup All purpose flour (maida)
  • ½ tsp. Salt.
  • ½ tsp.turmeric pd.
  • ½ tsp.red chilli powder.
  • Pinch of Asafoetida.
  • ½ tsp. Baking soda
  • ¾ cup water.
  • Oil for drizzling.

Method

  1. In one big mixing bowl sieves all dry ingredients.
  2. Slowly add water and make sauce like batter.
  3. Heat a lightly greased griddle.
  4. Pour the 1/4 cup batter onto the griddle and spread it evenly in circular manner.
  5. Drizzle oil at the edges and allow to cook till golden.
  6. Flip the Omlette and cook other side.
  7. Enjoy your eggless Omlette with red chutney and green chutney.
  8. You can also add finely chopped onion,tomatoes, green chillies, coriander leaves which will enhance the taste.
  9. On nonstick tawa you can make this without oil so it will becomes best food in Jaundice and for weight loss .

(41) Malpuva (Pancake)

20-24 Malpuvas

Ingredients

  • 2 cups all purpose flour (maida).
  • 2 tbsp. Sugar powder.
  • 4 tsp. Baking powder.
  • ½ tsp. Baking soda.
  • ¼ tsp. Salt.
  • 1 ¾ cups milk .
  • 2 tbsp.melted butter or ghee

Method

  1. In one big mixing bowl sieves all dry ingredients.
  2. Add melted butter and mix thoroughly with dry ingredients.
  3. Slowly add milk and make a sauce like batter.
  4. Heat a lightly greased griddle(tawa) .
  5. Pour the batter on to the griddle using approximately 1/4 cup for each pancake.
  6. Spread it evenly in circular manner.
  7. Drizzle ghee or butter at the edges and allow to cook till golden .
  8. Flip the malpuva and cook other side.
  9. Serve the malpuva with Chocolate syrup,Honey or Rabadi or as you want.Serve with love and smile.

(34) Bhakhri

Make 8 bhakhri

Ingredients

  • 2 cup Wheat flour
  • OR
  • 1½ cup wheat flour+ ½ cup suji
  • OR
  • 1½ cup wheat flour+ ½ cup sieved lapsi flour.( lapsi flour is coarsely ground wheat flour like semolina- suji. Coarse whole wheat flour commonly known as ”jada atta” or ”churma lapsi atta”
  • ½ tsp. salt.
  • 60 ml. oil.
  • or
  • 4 tbsp oil.
  • 175 ml water.
  1. In mixing bowl mix all ingredients and knead a stiff dough. Keep aside for 10 -15 mins.
  2. Smear with little ghee and again knead to a smooth dough.
  3. Divide the dough into 8 equal portions.
  4. Roll  each dough ball into flat , round bhakhri.
  5. Preheat tawa on a medium flame.
  6. Roast both the sides,apply little ghee and press gently with wooden press till it turns light golden brown.
  7. Enjoy bhakhri with any vegetable curry, Jeggary and pickle.
  8. You can use bhakhri as pizza base and instead of slice bread in sandwiches.

(32) Methi na thepla

20-25 thepla

Ingredients

  • 300 gms.wheat (gheu)atta.
  • 200 gms. Millet (bajari or Jowar)atta
  • 1 bowl(150 ml.bowl size)finely chopped fresh Fenugreek (methi) leaves.
  • 1 bowl finely chopped fresh coriander (dhaniya patti)leaves.
  • 4 tbsp.sugar.
  • 4 tsp.salt.
  • 4 tbsp.oil
  • 3 tsp.chilli pd.
  • 1 tsp. turmeric pd.
  • 2 pich of Asafoetida (hing).
  • 5 tbsp.curd.
  • 100-120 ml.water.

Method:

  1. In one big mixing bowl marinate methi leaves and coriander leaves with salt and sugar for 30 mins.
  2. Add oil ,curd and all dry spices in marinated mixture.
  3. Mix thoroughly and add atta and again mix and knead . Take water for soft and smooth dough.
  4. Keep aside for 30 min.
  5. After 30 mins. divide dough into 20-25 equal parts .
  6. With the help of rolling pin ,roll each dough ball like roti and shallow fry with oil .Apply ghee and serve hot or carry with you while traveling or in offices.
  7. You can enjoy your thepla with Aam ras,Masala tea, herbal tea,tameta nu shak,kela nu shak or any pickle,jam,chhundo.

(24) Chakli

Indian snacks

Ingredients:

1kg Rice( chawal) flour

9 tbsp melted butter or ghee

5 tsp.red chilli pd.

4 tsp. salt

1 tbsp.white sesame seeds( til)

1 tbsp.cumin(jeera)

600 ml water

Oil for frying.

Method:

1) In one big mixing bowl add all ingredients and knead medium hard dough ,cover it with a damp cloth and rest the dough for 1 hr.

2)After 1 hr.again knead the dough .

3 ) Place a portion of the dough in the chakli maker

4) Tighten the lid and move in rounds to get a spiral shape.

5)Fry the chakli till it is golden.

6)Drain chakli on a paper towel to remove excess oil.

7)Once the chakli are cooled at the room temperature store in an air tight container for 1 month.

8) Enjoy chakli with tea,Herbal tea, milk ,coffee or as you want.It is the best option to carry ready to eat food while tracking,hiking or on a picnic.

(25) Sweet Shakarpare

Indian snacks

Ingredients:

300 gms. All purpose flour( maida)

4 tb.sp rawa(suji)

75 ml.melted ghee

5 tbsp.sugar

75 ml. water

½ tsp. salt

Oil for frying

Method:

1) In one mixing bowl heat water ,add sugar to melt and set aside to cool.

2) Add all the ingredients and knead a dough and set aside for 30 mins.

3) Make 2 equal parts of dough and roll to thick roti and cut into 1 inch square.

4)Heat oil to deep fry and drop a batch of shakarpare and deep fry till golden ( remove 1 shade lighter from the oil )

5) cool down completely and store in air tight container for 1 month

6) Enjoy with tea,herbal tea,milk, during traveling or as you want.
