Method

  1. Either buy pop of Amaranth (Rajgira dhani) from the grocery store or make at home with the help of Amaranths grains.
  2. Mix all the ingredients and enjoy every morning as well as during your religious fasting.
  3. Amaranth is known as super food due to its nutritive value.
  4. Amaranth are high in fibre, gluten free and protein power house.
  5. One cup of cooked Amaranth provides 9 g.of proteins and 5.17 mg. of iron.

(376)Roasted puffed Amaranth

Ingredients

  • Amaranth grains
  • Heavy bottom kadhai.
  • Rolling pin or long handle spatula or thick cloth.

Method

  1. Heat heavy bottom kadhai.
  2. Add 1 tbsp of Amaranth grains in hot kadhai and stir vigorously so that grains will not burn.
  3. And you will see the grains of Amaranth puffed immediately. The whole process is done under a fast  flame.
  4. As soon as all grains are puffed, transfer to the plate.(Ideally transfer to the sieve,not in the plate because the meshed bottom of the sieve doesn’t allow water vapour to settle on its bottom.).
  5. Store puffed Amaranth in an air tight container up to 3 months.

(375)Moongdal + Rice Soup

Dal and rice liquid

Ingredients

  • ⅛ cup cooked Moong Dal ( you can also use Tur dal or Masoor dal)
  • ⅛ cup cooked Rice.
  • 250 ml. Water.
  • 1 tsp. Salt.
  • 1 tsp. Lemon juice.
  • 1 tsp. finely chopped Coriander leaves.
  • Tempering Ingredients
  • 1 tsp. Ghee.
  • ½ tsp. Cumin seeds.
  • ⅒ tsp. Asafoetida powder.
  • 1 Garlic clove paste.( optional).
  • 1 inch Ginger piece paste
  • 8-10 Curry leaves.

Method

  1. In a mixture grinder add cooked moong dal and rice and make a fine paste.
  2. Add the required quantity of water and make a soup consistency.
  3. Heat ghee in a tadka pan. Add cumin seeds. wait for a crackling sound. Add Asafoetida powder, Curry leaves and Ginger Garlic paste and pour into the rice dal liquid.
  4. Boil for two minutes. Now sprinkle coriander leaves and lemon juice. Serve hot with love and smile.

(374) Kolu Sharagva no soup

Pumpkin and Drumstick soup

Ingredients

  • 1 cup Pumpkin pieces.
  • 2 whole drumsticks cut into small pieces.
  • 350 ml. water.
  • 1 tsp. Salt.
  • ½ tsp Black pepper powder.
  • 1 tsp. finely chopped Coriander leaves.
  • Tempering Ingredients
  • 1 tsp. Ghee.
  • ½ tsp. Cumin seeds.
  • 1 Garlic clove.

Method

  1. Wash and peel the Pumpkin and cut it into small dice.
  2. Wash and cut Drumsticks into finger size pieces.
  3. Pressure cook both up to 2 whistles.
  4. When the pressure is released, open the lid and blend it into smooth paste.
  5. Add the water in the paste and boil it for 5 minutes after adding salt, black pepper powder and tadka.
  6. Garlic paste is optional if you like it then add. It will enhance the flavour of the soup.
  7. Sprinkle the coriander leaves and serve it hot with love and smile.

(373) Beetroot Carrot Soup

2 persons

Ingredients

  • One medium size Beetroot.
  • one medium size Carrot
  • ½ Onion (optional)
  • 1 tsp Salt.
  • ½ tsp Black pepper powder.
  • Tempering Ingredients
  • 1 tsp. Ghee.
  • ¼ tsp. Cumin seeds
  • 2 Cloves.

Method

  1. Peel and wash the Carrot , Beetroot and Onion ( if you are using).
  2. Pressure cook up to 2 whistles.
  3. When pressure is released, open the lid and blend into smooth paste.
  4. Strain the paste and add 300 ml. water to it. Boil for 5 minutes.
  5. Add salt, pepper and tadka in it.
  6. Serve hot with love and smile.

(371)Bajri na vada

Ingredients

  • 2 cup Bajri flour
  • ¼ cup Curd.
  • ¼ cup Coriander leaves.
  • ⅛ cup Sesame seeds.
  • 3 Tbsp. Oil.
  • 2 Tbsp. Green Garlic Chutney.
  • 1 Tbsp. Coriander Cumin powder.
  • 1 Tbsp. Sugar powder.
  • 1½ Tsp. Salt
  • 1 Tsp. Red chilli powder.
  • ¼ Tsp Carom seeds.
  • ¼ Tsp Turmeric powder.
  • ⅛ Tsp. Asafoetida powder.
  • ⅛ Tsp. Soda bi carb.
  • ¾ cup Water for kneading the dough
  • Oil for frying.

Method

  1. Mix all the ingredients in a big bowl.
  2. Knead a semi solid dough by adding water. Keep aside for 30 minutes
  3. After 30 minutes again knead for two minutes to get smooth and sticky  dough.
  4. one method is to apply oil on the surface of the steel plate and arrange small balls of dough on it. Taps with fingers and prepare all  vada and deep fry it. (see video)
  5. Another method is to apply oil on  your one palm and tap dough balls with two fingers of another hand and in this way make all the vadas and deep fry . (see video)
  6. Serve Bajri vada with Masala tea, Coffee, Curd, Chaas or as you wish but serve with love and smile.

(370)Tricolour Baby Uttapam

Ingredients

  • Ingredients for batter
  • 2 cup Green Moong Dal.
  • 2 Green chillies
  • 1 tsp. Salt
  • Ingredients for garnish
  • 200 gm.Paneer
  • 200 gm Brocolli
  • 2 Carrots
  • Chat masala

Method

  1. Wash and soak green moong dal for 7-8 hours.
  2. After 8 hours make a fine paste  of moong dal with green chillies and salt. Keep aside for 30 minutes.
  3. Meanwhile, prepare garnishing ingredients.
  4. Grate  Paneer, Broccoli and Carrot and keep aside.
  5. Heat nonstick tawa. Spread evenly in a circular manner moong dal batter and roast in ghee or butter.
  6. Flip when one side is cooked.
  7. On the cooked side arrange paneer, broccoli and carrot, sprinkle chat massla over it and close the lid, cook it for 2 minutes on slow flame.
  8. Serve hot with coconut chutney or Green chutney or as you wish but serve with love and smile.

They can be made from various ingredients like oil, vinegar, herbs, spices, and sometimes things like yogurt or mayo. Think of them as the flavorful coats that make your veggies sing!

Following are some salad dressing tips for you.

1) Parsley Dressing

Juice of one lemon or 2 tbsp. of lemon juice+ ¼ cup fresh Parsley + 2 tbsp. Olive oil + 5 pcs. of soaked Almonds  + ¼ tsp. Salt +¼ tsp. Black  Pepper powder.

Blend together and pour on your salad and enjoy.

2) Coriander Dressing

2 tbsp. Lemon juice+ 3-4 Garlic cloves + ¼ cup Coriander leaves + 2 tbsp. Olive oil + ¼ tsp. Salt + ¼ tsp. Black Pepper powder + ¼ tsp. Cumin powder + 5-6 soaked Almonds .

Blend together and pour on your salad and enjoy.

3) Creamy Mixed Herbs Dressing

2 tbsp. Lemon juice + 2 tbsp. Olive oil + 1 tbsp Mayonnaise + 1 tbsp. Honey + ¼ tsp. Salt + ¼ tsp chilli flakes or ¼ tsp Black pepper powder + 1 tsp. Mixed Herbs + 5 walnuts

Blend together and pour on your salad and enjoy.

4) Creamy Tahini Dressings

¼ cup Yogurt  +  ⅛ tsp Lemon zest + 1 tbsp. Lemon juice  + 1 tbsp. Tahini paste + 2 Garlic cloves + 2 tbsp. Olive oil + 1 tsp. Mix herbs + ¼ tsp. Salt + ¼ tsp. Black pepper powder + ¼ cup water.

Blend together and pour on your salad and enjoy.

5) Mixed herbs Tofu Dressing

2 tbsp. Lemon juice + 25 gm.Tofu  + 2 tbsp. Olive oil + 2 Garlic cloves + 1 tsp. Mix herbs + ½ tsp. Salt + ½  tsp Black pepper powder + 2 tbsp. Cashews + ¼ cup water.

Blend together and pour on your salad and enjoy.

6) Lemon Mustard Dressing

1 tsp. Mustard paste + 2 Garlic cloves+ 2 tbsp. Olive oil + 2 tbsp Lemon juice + ¼ tsp. Salt + ¼ tsp. Black pepper powder + 5 soaked Almonds

Blend together and pour on your salad and enjoy.

7) Basil Dressing

2 tbsp. Lemon juice + 2 tbsp. Olive oil + 2 tbsp. Basil paste +2 tbsp.Green Olives +  ¼ tsp. Salt + ¼ tsp. Black pepper powder + ¼ cup water.

Blend together and pour on your salad and enjoy.

8) Raw Mango Dressing

1 tbsp Lemon juice + ¼ cup Raw Mango pieces +¼ cup Onion  pieces + 1 tsp. Cumin powder + ¼  tsp. Salt  + ½ tsp. Red chilli powder + 2 tbsp. Olive oil + 1 tsp. Sugar + ¼ cup water + 1 tsp. Sesame seeds

Blend together and pour on your salad and enjoy.

9) Tomato Dressing

½ cup Tomato pieces + ¼ cup Onion pieces + 2 Garlic cloves + 1 tsp. Lemon juice + ½ tsp. Salt + ½ tsp Red chilli powder + 2 tbsp. Olive oil + 5  soaked Almonds.

Blend together and pour on your salad and enjoy.

10) Paneer Dressing

2 tbsp. Lemon juice + ¼  cup Paneer + 2 Garlic cloves  + ¼ cup water + ½ tsp. Salt + ¼ tsp. Black pepper powder + 1 tsp. Mix herbs + 2 tbsp. Olive oil + 5 cashews.

Blend together and pour on your salad and enjoy.

11) Creamy Avacado Dressing

2 tbsp. Lemon juice + 1 whole medium size Avacado + 2 Garlic cloves + ½ tsp. Salt + ¼ cup chopped Coriander leaves + 1 inch size Ginger piece + 5 soaked Almonds + ¼ cup water

12) Honey Mustard Dressing

2 tbsp. Lemon juice + 2 tbsp. Honey + 1 tsp. yellow mustard seeds paste  + 2 tbsp. Olive oil + ½ tsp. Salt + ¼ tsp. Black pepper powder.

Ingredients

  • 2 cups Homemade protein powder.
  • 1 cup Dry date powder ( Kharek powder)
  • ½ cup dry date powder for coating.
  • 1 cup Date syrup.

Method

  1. Mix all three ingredients in a big bowl.
  2. After getting dough like consistency make a small size ladoo.
  3. Coat each ladoo with dry date  powder. Use date powder generously so that the sticky layer  of ladoo  becomes dry.
  4. Serve with warm turmeric milk or as you wish.
