(256) Dashmi

Sweet Bhakhri

Ingredients

  • 2 cup Wheat flour.
  • 4 tbsp. Ghee.
  • ½ tsp. Salt
  • 150 ml. milk.
  • 6 tsp. Sugar.

Method

  1. Boil milk after adding sugar in it. Keep aside to cool down.
  2. In a mixing bowl mix wheat flour, salt and ghee thoroughly and check the moin by making fist with flour. If flour holds the shape it means the moin of ghee is perfect for the flour.
  3. Start kneading the dough of Dashmi with sweet milk and adjust the consistency by adding 1-2 spoons of milk. Keep aside for 10 minutes to set.
  4. After 10 minutes knead more and make a smooth dough.
  5. Divide dough into 12 to 14 equal parts.
  6. Take one part , make a smooth ball and roll into 2-3 mm thick Dashmi.
  7. Heat nonstick tawa roast both the sides with drizzling ghee.
  8. Serve with Herbal tea, Masala tea, Masala milk, Turmeric milk or Immunity booster tea. Accompanied with Golkeri, Amla murabba, Amla Gunda pickle or as you wish.

(100) Coconut Milk & Coconut Punch

Ingredients

  • Coconut flesh.
  • Coconut water.

Method

  1. Wash and clean coconut flesh.
  2. Cut in to 3 inches pieces.
  3. Crush the coconut flesh in juicer so coconut milk will be extracted .
  4. Extracted milk you can use as in preparation of authentic south indian and  thai food.
  5. Extracted milk also use as in preparation of mocktail like Coconut punch.
  6. For 100 ml. Coconut punch, add 60 ml. Coconut water and 40 ml. Coconut milk.
  7. Blend properly and filter ( optional) it.
  8. If you don’t have enough coconut water ,you can also add plain water instead of coconut water and adjust by adding the milk quantity . So that taste won’t be compromise. If necessary add sugar powder also.
  9. Enjoy Coconut punch in scorching summer.

(48) Turmeric Milk

Serves 2. 250 ml each.

Ingredients:

  • Milk 500 ml.
  • ¼ tsp. Turmeric powder.
  • ⅛ tsp. Carom seeds(Ajwain)(optional).
  • ½ tsp.Ghee(optional).
  • 2 tsp. Sugar (optional).

Method:

  1. Heat milk and sugar up to boiling.
  2. Side by side heat tempering vessel with ghee.
  3. Once ghee melts add carom seeds.
  4. As soon as crackling sounds starts ,pour it into milk.
  5. Give one more boil and turmeric milk is ready.
  6. Ideally to be served hot as it is or first strain and then serve.

(41) Malpuva (Pancake)

20-24 Malpuvas

Ingredients

  • 2 cups all purpose flour (maida).
  • 2 tbsp. Sugar powder.
  • 4 tsp. Baking powder.
  • ½ tsp. Baking soda.
  • ¼ tsp. Salt.
  • 1 ¾ cups milk .
  • 2 tbsp.melted butter or ghee

Method

  1. In one big mixing bowl sieves all dry ingredients.
  2. Add melted butter and mix thoroughly with dry ingredients.
  3. Slowly add milk and make a sauce like batter.
  4. Heat a lightly greased griddle(tawa) .
  5. Pour the batter on to the griddle using approximately 1/4 cup for each pancake.
  6. Spread it evenly in circular manner.
  7. Drizzle ghee or butter at the edges and allow to cook till golden .
  8. Flip the malpuva and cook other side.
  9. Serve the malpuva with Chocolate syrup,Honey or Rabadi or as you want.Serve with love and smile.

(34) Bhakhri

Make 8 bhakhri

Ingredients

  • 2 cup Wheat flour
  • OR
  • 1½ cup wheat flour+ ½ cup suji
  • OR
  • 1½ cup wheat flour+ ½ cup sieved lapsi flour.( lapsi flour is coarsely ground wheat flour like semolina- suji. Coarse whole wheat flour commonly known as ”jada atta” or ”churma lapsi atta”
  • ½ tsp. salt.
  • 60 ml. oil.
  • or
  • 4 tbsp oil.
  • 175 ml water.
  1. In mixing bowl mix all ingredients and knead a stiff dough. Keep aside for 10 -15 mins.
  2. Smear with little ghee and again knead to a smooth dough.
  3. Divide the dough into 8 equal portions.
  4. Roll  each dough ball into flat , round bhakhri.
  5. Preheat tawa on a medium flame.
  6. Roast both the sides,apply little ghee and press gently with wooden press till it turns light golden brown.
  7. Enjoy bhakhri with any vegetable curry, Jeggary and pickle.
  8. You can use bhakhri as pizza base and instead of slice bread in sandwiches.

(24) Chakli

Indian snacks

Ingredients:

1kg Rice( chawal) flour

9 tbsp melted butter or ghee

5 tsp.red chilli pd.

4 tsp. salt

1 tbsp.white sesame seeds( til)

1 tbsp.cumin(jeera)

600 ml water

Oil for frying.

Method:

1) In one big mixing bowl add all ingredients and knead medium hard dough ,cover it with a damp cloth and rest the dough for 1 hr.

2)After 1 hr.again knead the dough .

3 ) Place a portion of the dough in the chakli maker

4) Tighten the lid and move in rounds to get a spiral shape.

5)Fry the chakli till it is golden.

6)Drain chakli on a paper towel to remove excess oil.

7)Once the chakli are cooled at the room temperature store in an air tight container for 1 month.

8) Enjoy chakli with tea,Herbal tea, milk ,coffee or as you want.It is the best option to carry ready to eat food while tracking,hiking or on a picnic.

(02) White Bread

Bread is a staple food prepared from a dough of flour (usually wheat) and water, usually by baking. Nowadays there is a revolution in the culinary industry that people bake bread not only with wheat but with other grains also. We get many different types of bread in the market .

Bread with yeast ,without oven,in kadhai

Ingredients

  • 100 ml luke warm milk
  • 2 tsp. Sugar.
  • 2½ tsp.dry yeast.
  • 200 gms. All purpose flour (Maida).
  • 1 tsp. Salt.
  • 1 tsp. Mix herbs.
  • 2 tsp. Milk powder.

Method

1) 1 bowl(100 ml.) luke warm milk+ 2 tsp sugar+ 2 ½ tsp dry yeast keep aside for 10 mins.

2) After 10 mins take 2 bowl tightly filled maida( 200gms)+1 tsp. salt+ 1 tsp mix herbs + 2 tsp milk powder and add active yeast mixture and knead dough.

3) Add water if require and develop gluten by continue kneading and prepare loose  (chipchipa) dough . 

4) After 10 mins dough becomes very soft and won’t stick to your hand 

5) Add 1 tsp ghee or butter and again knead for 5 mins.

6) Cover it with damp cloth and rest the dough for 1 hr.

7) After one hr. remove cloth .Your dough is doubles in size ,punch lightly for 5 mins .

8) After smoothing dough keep it in greased baking vessel for one more hr. and prepare 3 sp .sweet milk and keep aside.

9) After 50 mins.put kadhai for pre heating.

10) After 1 hr. dough again doubles  in size .now apply very lightly sweet milk with brush. Sprinkle white sesame (til) seeds

11) Put this baking vessel in pre heated kadhai for 30 mins.on slow flame.

12) After 30 mins . first check the baked bread with knife and if done then apply butter or ghee with brush and keep for 5 more mins.

13) Switch off gas .unmould bread and cover with damp turkish nepkin for 5 mins.

14) Serve your bread with masoor ,misal or with milk, kandabhaji, batata Vada. Serve with love and smile.

(01) Wheat Bread

Bread without yeast, without oven,in kadhai

Ingredients:

  • 200 gms Wheat flour
  • 1 tsp. Salt.
  • 1 tsp.Sugar.
  • 1 tsp. Oregano.
  • 1½ tsp. Baking powder.
  • ½ tsp. Baking soda.
  • ¾ cup Butter milk( 5 tsp.curd+¾ cup water).
  • 1 tsp. Sesame seeds.
  • 2 tsp.oil
  • Oil for greasing bread vessel.

Method

Start pre heating kadhai

1 In one big mixing bowl mix all dry ingredients.

2 Slowly slowly add buttermilk and mix flour.

3 Add oil and mix it.

4 No hard mixing ,mix with fingers.

5 Pour mixture in greased bread vessel.

6 Pat mixture with greased fingers.

7 Sprinkle Sesame seeds.

8 Place bread vessel on stand in preheated kadhai.

9 Bake bread for 30 mins on slow flame and check by piercing knife .If clean knife then bread is cooked otherwise 5-10 mins.more on flame .

10 Turn off flame , apply ghee or butter on bread with brush or spoon .

11 Unmould bread after it cools.

12 Serve  your yummy healthy bread with milk or cutlets or batata vada or Kandabhaji. Serve with love and smile.
