(584)Moongdal Sandwich

Sometimes, the simplest ingredients create the most innovative recipes. This Moong Dal Sandwich is a perfect example—completely bread-free, yet just as satisfying and comforting as a traditional sandwich. Made using a smooth moong dal batter cooked in a sandwich toaster, it forms a soft, protein-rich outer layer that beautifully replaces bread. Ingredients

  • Ingredients for making bread:-
  • 2 cup whole moong or split green moong dal.
  • 2-3 Green chilies.
  • 2 inch size Ginger piece.
  • 1 tsp. Salt.
  • 1 tsp. Eno.
  • Ingredients for stuffing :-
  • 5 medium sized Potatoes.
  • ½ cup finely chopped Coriander leaves.
  • 3- 4 green chilies either finely chopped or paste
  • Paste of 2 inch sized Ginger piece .
  • 1 tsp. Salt
  • 2 tbsp. Lemon juice.
  • Ingredients for tempering:-
  • 2 tbsp. Oil.
  • ¼ tbsp. Mustard seeds.
  • ¼ tsp. Cumin seeds.
  • ¼ tsp. Asafoetida powder.
  • 10-12 tender Curry leaves. If mature leaves then chopped finely.

Method

  1. Method for making stuffing
  2. Wash and boil potatoes in a pressure cooker up to 3 whistles.
  3. When pressure releases, open the lid, peel the boiled potatoes and mash it with the help of a potato masher.
  4. Add all ingredients and mix well. This is our potato stuffing.
  5. Heat oil in a nonstick pan and add mustard seeds, wait for the crackling sound and add cumin seeds, Asafoetida and other ingredients, saute for ½ minute and then add potato stuffing. Mix well and saute for two minutes. Switch off the flame and transfer the stuffing in a plate to cool down.
  6. Divide the potato stuffing in the 2 inches ball size  portion and make a tikki and keep aside.
  7. Method for making Sandwiches:-—
  8. Soak the whole moong or Green moong dal for 6-7 hours.
  9. Wash and grind soaked moong dal, green chillies, ginger and salt without water in the smooth paste. Keep aside for 2 hours.
  10. Add eno in the batter and mix well.
  11. Heat a nonstick sandwich toaster, grease both the sides .
  12. Pour batter on one side of the greased toaster, place a tikki of potato stuffing in the center and once again pour moong dal batter over it.
  13. Close the toaster and cook over a slow flame till it turns golden brown. ( It takes 10-15 minutes to cook both sides.)
  14. The moong dal sandwich is ready to serve. Serve with tomato ketchup and green chutney or as you wish but serve with love and smile.

(02) White Bread

Bread is a staple food prepared from a dough of flour (usually wheat) and water, usually by baking. Nowadays there is a revolution in the culinary industry that people bake bread not only with wheat but with other grains also. We get many different types of bread in the market .

Bread with yeast ,without oven,in kadhai

Ingredients

  • 100 ml luke warm milk
  • 2 tsp. Sugar.
  • 2½ tsp.dry yeast.
  • 200 gms. All purpose flour (Maida).
  • 1 tsp. Salt.
  • 1 tsp. Mix herbs.
  • 2 tsp. Milk powder.

Method

1) 1 bowl(100 ml.) luke warm milk+ 2 tsp sugar+ 2 ½ tsp dry yeast keep aside for 10 mins.

2) After 10 mins take 2 bowl tightly filled maida( 200gms)+1 tsp. salt+ 1 tsp mix herbs + 2 tsp milk powder and add active yeast mixture and knead dough.

3) Add water if require and develop gluten by continue kneading and prepare loose  (chipchipa) dough . 

4) After 10 mins dough becomes very soft and won’t stick to your hand 

5) Add 1 tsp ghee or butter and again knead for 5 mins.

6) Cover it with damp cloth and rest the dough for 1 hr.

7) After one hr. remove cloth .Your dough is doubles in size ,punch lightly for 5 mins .

8) After smoothing dough keep it in greased baking vessel for one more hr. and prepare 3 sp .sweet milk and keep aside.

9) After 50 mins.put kadhai for pre heating.

10) After 1 hr. dough again doubles  in size .now apply very lightly sweet milk with brush. Sprinkle white sesame (til) seeds

11) Put this baking vessel in pre heated kadhai for 30 mins.on slow flame.

12) After 30 mins . first check the baked bread with knife and if done then apply butter or ghee with brush and keep for 5 more mins.

13) Switch off gas .unmould bread and cover with damp turkish nepkin for 5 mins.

14) Serve your bread with masoor ,misal or with milk, kandabhaji, batata Vada. Serve with love and smile.

(01) Wheat Bread

Bread without yeast, without oven,in kadhai

Ingredients:

  • 200 gms Wheat flour
  • 1 tsp. Salt.
  • 1 tsp.Sugar.
  • 1 tsp. Oregano.
  • 1½ tsp. Baking powder.
  • ½ tsp. Baking soda.
  • ¾ cup Butter milk( 5 tsp.curd+¾ cup water).
  • 1 tsp. Sesame seeds.
  • 2 tsp.oil
  • Oil for greasing bread vessel.

Method

Start pre heating kadhai

1 In one big mixing bowl mix all dry ingredients.

2 Slowly slowly add buttermilk and mix flour.

3 Add oil and mix it.

4 No hard mixing ,mix with fingers.

5 Pour mixture in greased bread vessel.

6 Pat mixture with greased fingers.

7 Sprinkle Sesame seeds.

8 Place bread vessel on stand in preheated kadhai.

9 Bake bread for 30 mins on slow flame and check by piercing knife .If clean knife then bread is cooked otherwise 5-10 mins.more on flame .

10 Turn off flame , apply ghee or butter on bread with brush or spoon .

11 Unmould bread after it cools.

12 Serve  your yummy healthy bread with milk or cutlets or batata vada or Kandabhaji. Serve with love and smile.
