(77) Lila lasan nu kachumber

Ingredients

  • Green garlic 100 gms.
  • ½ tsp ghee.
  • ½ tsp cunin
  • ⅓ tsp salt.

Method

  • Seperate white hairy roots from the garlic pods.
  • Wash thoroughly and finely chopped green leaves as well as garlic pods.
  • Heat ghee and cumin seeds in saucepan.
  • After crackling sound add freshly chopped materíal in it.
  • Saute for 2 minutes.
  • Add salt.
  • Accompanied with roti,paratha and rotla or as your desire.
  • Serve with love and smile.

(35) Amla Murabba

Ingredients:

  • 1 kg. Amla.
  • 1 kg. Sugar or 1 kg finely chopped Jeggary.
  • 15-20 Saffron strands.
  • 5-7 Cloves.
  • 5-7 Cinnamon sticks ½ inches long.
  • ½ tsp. Cardamom powder.

Methods

  1. Wash and wipe good quality Amlas .
  2. Keep all Amlas in pressure cooker and pour 2 cups of water in it.
  3. Cooks up to 3 whistles
  4. Pressure releases ,open cooker and strain water from the cooker. Preserve this water for making Amla squash.
  5. Deseed them and mash with potato masher throughly. Remove hard visible fibers from the pulp.
  6. In thick deep sauce pan mix pulp and sugar throughly.
  7. On high flame ,stir continuously for 10 mins.
  8. Turn flame slow and add cardamom powder, cloves and cinnamon sticks. Crush saffron strands with finger and thumb and add in pulp.
  9. Stir continuously for 5 more min. on slow flame.
  10. Turn off the flame and Amla Murabba is ready.
  11. Bottled murabba once it cools completely.
  12. You can store upto one year and enjoy with your food, bread, bhakhri, paratha, roti or as a medicine ,one tbsp. twice a day .

(21) Biscuit Chat/Puri Chat

Serves:4

Ingredients

16 Monaco biscuits/Jeera puri/salty puri

16 slices of tomato

16 slices of cucumber

Green chutney.

Red Sweet Chutney

tomato sauce

4 cheese slices (each cut it into 4 equal parts)

1 cup grated cheese

1 cup sev

Chat masala

Method:

1) Arrange all biscuits in one big dinner plate

2) Over each biscuit ,stake cheese, cucumber and tomato slice.

3) Top it up with green chutney,red sweet chutney and tomato sauce as much as you want.

4) Sprinkle sev and shredded cheese.

5) Enjoy biscuits chat with tea or as you like.

(18)Sweet chutney

Red chutney, Khajur Amli chutney

Ingredients

  • 500 gms. Red Dates.( lal khajur)
  • 100 gms. Tamarind (Imli)
  • 250 gms. Jaggery (Gud)
  • 2 tbsp. Salt.
  • ¼ tsp. Asafoetida (Hing).
  • 2 tbsp. Coriander Cumin powder.
  • 2 tbsp. Red chilli powder.

Method:

1) Wash khajoor and imli

2) In steel vessel add all ingredients and 2 bowl (200 ml) water and pressure cook upto 4 whistles

3) After cooker cools down, deseed khajoor and imli.

4) Transfer all the ingredients in grinder and make a smooth paste of pouring consistency. Strain this mixture with the help of strainer.

5) Boil this chutney mixture for 5 mins.stir continuously.

6) After tasting chutney ,bottle it in air tight container or make a cubes in pop up ice tray.

7) If you keep in fridge, chutney will taste good upto 1 month. Chutney cubes in freezer lasts for 3 months.

8) Enjoy your sweet chutney with chats,vada,pakoda,chilla etc.

(17) Green Chutney

Ingredients

  • 5 cups washed,finely chopped coriander.
  • 5 green chillies. If you want more spicy then add more chillies.
  • 1cup washed mint leaves
  • 2tbsp.bhuna channa dal( roasted gram) or khara singdana ( roasted salty peanuts) if you want to use with farali dish.
  • 3 tbsp. lemon juice.
  • Salt to taste.
  • 1 tsp. sugar.

Method:

1)In a mixture jar grind bhuna chana dal and keep aside.

2) In jar add all ingredients except bhuna chana dal pd. and make a smooth paste by adding 100 ml. chilled water.

3) Now mix bhuna chana pd. and again churn the paste one more time.

4) Green chutney is ready,taste it once and now fill pop up ice tray with chutney. Freeze it for 8-10 hrs.

5) Unmould chutney cubes and keep it in air tight container and again freeze it.

6) Use these chutney cubes by defrosting whenever you needed

7) Enjoy you green chutney in sandwiches,vada,pakoda,with main course etc.

(13) Herbal Tea

Serves 2. 250 ml.each

Ingredients

water. 500 ml.

Basil(Tulsi) Leaves. 8-10

Lemon grass. 15-20 pcs

Mint (Phudina) Leaves 8-10

Ginger grated 1/2 inch

Method:

1) In one big vessel mix all ingredients and boil for 10 mins.

2) Herbal tea is ready. Add 2 tsp. honey(optional) and squeeze 1/2 lemon in 500 ml. tea.

3) Enjoy your herbal tea with some cookies, sweet shakarpare,salty biscuits, salty namakpare ,mathri or puri.

(05) Kadha (Immunity booster)

Kadha or kadho is a traditional Indian drink, often consumed as a chai or tea and is considered to be effective against cough and cold and seasonal flu. Made with Indian herbs and spices, Kadha is a natural immunity booster and is said to be the best remedy against fever and sore throat. It also cures cough and is loaded with antioxidants.

Serves 4  (200 ml.) each

Ingredients

  • 800 ml. Water .
  • 4 tbsp. Sugar.
  • ½ tsp. Ginger powder ( Sunth).
  • ½ tsp. Pipramul powder (Ganthoda).
  • ½ tbsp. Cumin seeds ( Jeera)
  • ¼ tbsp. Carom seeds (Ajwain)
  • ¼ tsp. Cardamom powder (Elaichi).
  • 8-10 strands of Saffron ( Kesar).Pinched and crushed with finger and thumb. Only during cold season.
  • ⅛ tsp Cinnamon powder.
  • 2 Cloves powder
  • 8- 10 Holy Basil leaves

Method:

1) Take water in big vessel

2) Add all ingredients , stir and put it on fast flame

3) Stir occasionally and boil it like tea

4) Switch off flame after 5 mins of boiling

5) Serve this kadha every day morning, afternoon or at bedtime in Monsoon ,Winter or during corona or in throat infection, allergy due to seasonal changes, flu, cough, cold. No need to strain. Serve with love and smile.
