Pluck leaves from Celery stalk, wash and keep aside.
Wash Green peas, chillies and Ginger and keep aside.
Grind it into a fine paste of all ingredients and keep aside.
In a mixing bowl mix wheat flour, oil, and all dry spices. Mix thoroughly and check oil is in the exact amount by making fist of flour. If flour holds the shape it means oil is perfect.
Mix paste in flour and knead soft dough with the required quantity of water.
With the help of dry flour roll parathas and roast with ghee on medium flame.
In a pressure cooker add oil, Asafoetida powder and washed beans , salt and sugar. This is called cold tadka. As we are not heating oil .
Stir once and add remaining ingredients of shak in the pressure cooker. Add ¼ cup water. Again stir and switch on the flame.
Pressure cook upto two whistles. Keep aside.
In mixing bowl mix wheat flour with oil and then mix remaining ingredients of dhokli and knead into soft dough. Keep aside for 1 hour.
After 1 hour due to the coarseness of the wheat flour,soft dough now turns into medium hard dough.
Hold a small portion of dough and roll over a wooden board or mat and make a long cylinder. Now hold this cylinder with one hand and with the other hand fingers, pinch a small portion of dough. Roll the dough portion with your fingers and then press with your thumb. This way makes all dhokli and keep aside.( see Video).
Open the lid of the pressure cooker. Stir and mix the cooked beans.
Add 3 glass (1½ lit.)of water in same cooker and boil on high flame.
Once it starts boiling add all dhokli , give one quick stir and close the lid and pressure cook upto 2 whistles.
Once pressure releases, open the lid and adjust the consistency by adding water,
Add jaggery and kokum, give one boil on high flame. If you want to add lemon juice instead of kokum then mix juice only after switching off the flame.
Taste the dish before serving. Serve hot dhokli nu shak with Fulka Roti, bhakhri, paratha,rice or as you wish.

Cut each amla in to lengthwise wedges and keep aside.
Cut each Gunda into 4 and remove seeds and keep aside.
If we measure after cutting Amla and Gunda whole content is 7 cups.
In big vessel , mix amla, gunda and athana no sambhar . Also mix seeds of gunda.
As mucilaginous pulp of fruit, which remains stick with seeds, having medicinal value and when pickle will season in a week time whole mucilaginous pulp will mix with pickle.
Store in air tight glass jar at room temperature. After tightly fill jar with pickle, pour extra oil on the top and make sure that layer of the oil is above the pickle layer but if you are storing pickle in refrigerator then no need to add extra oil.
Enjoy pickle with any of your favourite food but it taste best with steamed rice, khichadi or with plain Roti, Paratha, Bhakhri and Rotla.
Wash Spinach leaves thoroughly and finely chopped ½ bunch of Spinach for kofta
Marinate finely chopped Spinach with salt and sugar and keep aside.
Blanch remaining Spinach and keep aside.
Cut onions for gravy.
Heat oil in nonstick pan and soute all dry ingredients and then add onion wedges, garlic pods and ginger .Soute till onion becomes translucent.
Make a paste once it is cool down and keep aside.
Make a puree of blanched spinach and keep aside.
In marinated spinach mix wheat flour, besan and all spices.
Mix all the ingredients thoroughly and make a kofta batter.
Heat oil for kofta frying.
Half fry all kofta and keep aside.
Heat oil in nonstick pan and add Cumin seeds. After crackling sound add Asafoetida powder, bay leaves, curry leaves, red chilli. Quickly stir and add onion gravy . Soute till oil separates. Add curd and Spinach puree. Give quick stir for 2-3 times and then add 1 cup water.
Once gravy starts boiling add all kofta , close the lid and cook in slow flame for 5 minutes.
Switch off the flame and garnish with coriander leaves.
Taste the dish before serving. Serve hot Spinach kofta Curry with paratha, kulcha, nan, roti, bhakri , rice or as you wish.

You can also make khakhra from leftover paratha, thepla or bhakhri . This khakhra will take more time means 5-6 minutes as thickness is mostly double then roti. Procedure will be the same.
¼ cup coarse besan or coarse dalia dal (roasted channa dal)
2-3 Kokam(Garcinia) or 1 tbsp. lemon juice.
1 tbsp.Coriander-Cumin powder.
½ tbsp. Chili powder.
1 tsp. Turmeric powder.
½ tsp. Asafoetida powder.
½ tsp. Mustard seeds.
¼ tsp. Fenugreek seeds.
½ tbsp. Salt.
1 tsp. Sugar.
Method
Wash thoroughly and wipe with dry cotton cloth each bhinda otherwise water content remains makes shak sticky.
Cut each into ½ inch dice .
Heat oil in kadhai. Add Mustard seeds in the hot oil. Wait for crackling sound. Add Fenugreek seeds and Asafoetida powder . Wash kokam and add.
Add cut bhinda , give nice stir and close the lid. Turn the gas stove switch on slow flame.
After 2 minutes open the lid and give nice stir for 2- 3 times.
Cook bhinda on medium flame and frequently stir so that bhinda won’t stick to the bottom of kadhai.
Once bhinda is tender and all slimy material dry off add salt and sugar. Mix thoroughly.
Add coconut powder, coriander leaves and dry spices . Mix thoroughly. Cook for one more minute and Bhinda nu shak is ready. If you wish you can add fried cashew and kismis which enhance the taste of bhinda nu shak.
