(617) Dara Pickle

Ingredients

  • 500 gms. Dara stalks of Garmar plant.
  • 250 ml Khatu pani
  • ¼ cup Mustard coarse powder (Rai na kuriya)
  • 2 tbsp lemon juice.
  • 1 ½ cup Mustard oil.

Method

  1. Separate leaves from the twigs.
  2. Leaves are bitter and have medicinal properties and are used in Ayurveda. For making Dara pickle, discard the leaves.
  3. Scrap the upper skin of the stalk and keep aside in a water filled pan.(See video).
  4. Wash all stalks 2 times and keep submerged in water otherwise oxidation of stalks turns its colour.
  5. Take out each stalk from water, chop finely and keep chopped pieces in water.
  6. When you finish chopping, strain the dara, spread over the kitchen towel for 1-2 minutes.
  7. Mix salt and turmeric powder and keep aside for 10 minutes and after that soak it in khatu pani for 5 days and stir it every day.
  8. After 5 days you can observe that Dara becomes tender.
  9. Strain khatu pani and keep aside for 10 minutes to drain excess fluido.
  10. Now in a grinding jar make a paste of Rai na kuriya, lemon juice and ¼ cup mustard oil.
  11. Mix this paste with Dara. Transfer it in a clean, dry glass jar and pour remaining mustard oil in it.
  12. This Dara pickle is ‘ushn'(hot) by nature so serve it on a cold winter days or rainy day.
  13. Serve it  with Khichdi, Bhakhri, Roti, Paratha or as you wish but serve it with love and smile.
After 5 days.

Life is a journey of evolving roles, each with its own beauty and wisdom. From the structured world of academia to the ever-evolving realm of homemaking, I have embraced each phase with passion and grace. When my children settled into their own lives, I found myself with a renewed sense of purpose—to document and share the wealth of knowledge I have gathered over the years.

During the lockdown, I realized that my experiences in cooking, home remedies, and life’s simple yet profound lessons could serve as a source of inspiration for others. Meticulously and with great concern for the palate, gut health, overall well-being, and the emotional gratification of savoring each preparation, I began crafting a collection of love-filled, cherished recipes, time-tested remedies, and stories woven with warmth and wisdom.

I write under the name "Rajeshree's Kitchen", where I share detailed recipes—the kind that provide exact measurements for ingredients like salt and water, which are often left to personal interpretation in most other kitchen blogs. Additionally, I include practical tips with clear reasons behind them, ensuring that every piece of advice is rooted in understanding and experience. My aim is to make cooking approachable yet precise, helping readers not just recreate dishes but truly connect with the joy of cooking.

This endeavor is my way of preserving traditions, sharing insights, and connecting with those who seek both knowledge and comfort in life's everyday moments.
