(222)Nomato Sauce

Ingredients

Method

  • 500 gms. Pumpkin.
  • 2 medium size Onions.
  • ½ cup Basil leaves.
  • ¼ cup soft kokum( Garcinia indica)
  • 6 Garlic pods.
  • 3 tbsp. Mixed herbs.
  • 3 tbsp. Virgin olive oil.
  1. Peel pumpkin and wash. Grate or chop in a chopper and keep aside.
  2. Peel and wash onions and garlic pods. Chop in a chopper and keep aside.
  3. Finely chop Basil leaves and keep aside.
  4. Wash the Kokum and make a fine paste of it and keep aside.
  5. In a nonstick pan mix olive oil with all chopped ingredients and salt. Cook on a fast flame.
  6. When chopped vegetables turn tender add mixed herbs and kokum paste. Mix thoroughly and again cook for 5 more minutes and nomato sauce is ready.
  7. To achieve the perfect consistency of nomato sauce grind into coarse paste once it cools.
  8. Taste the sauce and if you want a more tangy taste then mix lemon juice to it when it cools completely.
  9. Enjoy Namato sauce in pizza and pasta when you are allergic to tomatoes.

(198)Tomato ketchup

Ingredients

  • 1 kg Red Tomatoes.
  • 1 tbsp. Oil.
  • ½ inch Cinnamon stick.
  • 6 whole Clove.
  • 6 whole Black pepper.
  • 1 Onion( optional).
  • 3 Garlic pods (optional).
  • 1½ tsp. Salt.
  • 3 tbsp. Sugar.
  • 1 tbsp. Red chilli powder.

Method

  1. Wash and cut each tomatoes into roughly 8 parts.
  2. Peel onion, wash and cut into roughly 8 parts.
  3. Cut Garlic pods into 2-4 parts.
  4. Heat oil in nonstick sauce pan.
  5. Soute Clove, Cinnamon stick and pepper corns for 30 seconds and add onion pieces, garlic and tomato pieces.
  6. Cook for 15 minutes on slow flame.
  7. Switch off the flame and once whole content has cooled down, grind into fine puree.
  8. Strain the puree and again heat to reduce water to get saucy consistency .Stir continuously otherwise it will stick to bottom of the pan.
  9. Store into air tight jar for 3-4 weeks in refrigerator.
  10. And if you want to store more, make cubes and store these cubes in deep freezer for 3-4 months.

(146) Mixed Herbs Butter.

Ingredients

  • 100 gms. Amul butter.
  • 1tbsp.finely chopped fresh Parsley.
  • 1 tbsp. finely chopped fresh Basil.
  • ¼ tsp. Oregano powder.
  • ½ tsp. Chilli flakes ( optional)
  • 4 Garlic pods or 1 tbsp. green garlic paste.

Method

  1. Pluck leaves of Parsely from stalks.
  2. Wash leaves and finely chop. Keep aside.
  3. With the help of rolling pin crush Garlic pods into smooth paste. Keep aside.
  4. Bring butter to room temperature .
  5. In mixing bowl, mix all ingredients- butter, Parsely leaves, Oregano powder, Chilli flakes and Garlic paste.
  6. Mix well and refrigerate.
  7. It remains fresh for 6 months in freezer.
  8. Apply this butter on bread, bhakhri, roti, paratha, kulcha, chila, Idli, Dosa or as you wish.

Method

  1. Prepare the batter following the instruction given on the pancake mix box.
  2. Pour the batter on dosa tawa either in stencil or round shape.
  3. Roast in butter or ghee .
  4. Serve hot with different toppings like nutella spread, honey, maple syrup, athana no sambhar for salty ,hot and tangy taste , golkeri for sweet and tangy taste or as your desire.

(83) Aachari Dips & Farali Dips

Curd dips.

A) Achari dips

Ingredients

Method

  1. Churn hung curd with wooden or metal churner.
  2. Add athana no sambhar and again churn for 2 times.
  3. Achari dips is ready .Serve with Pizza, Nachos, Khakhra, Chila, Garlic bread or as your desire.

B) Farali dips

Ingredients

  • 100 gms Hung curd.
  • 1 tb.sp. coarse ground nut.
  • ½ tsp. salt.
  • ½ tsp. green chilli paste
  • ½ tsp. freshly cut coriander leaves.

Method

  1. Churn hung curd with wooden or metal churner.
  2. Add all the ingredients and again churn for 2 times.
  3. Farali dips is ready. Serve with Potato Chips, Banana Chips, Purple Yam Chips, Jackfruit Chips

(64) Chili flakes

Ingredients:

  • 100 gms. Kashmiri chilis.
  • 50 gms. Byadgi chilis.

Method:

  1. Dry roast both chilis in non-stick pan on slow flame.
  2. After 5-7 mins. switch off the flame and cool down completely.
  3. Wear gloves and then remove stem,veins and seeds from each chili.
  4. In dry grinder pulse it for 1-2 times and chili flakes are ready.

Kashmiri chilis give colour and flavours whereas Byadgi mirch gives pungency to your chili flakes .So according to your choice ,you can change proportion of chilis .

Pearl Millet Roti (Gluten free roti)

Make 6 Roti

Ingredients

  • 2 cup bajri flour
  • 2 cups hot water.
  • 1 tsp. salt.
  • 1 tsp. Carom seeds ( Ajwain)

Method:

  1. In a mixing bowl take bajari flour and add salt and carom seeds.
  2. Add hot water and mix with spoon and try to knead dough. When all flour mix with water, at this moment you can touch with your hand,you feel that dough is warm.Knead continue for 5 mins.
  3. Divide dough into 6 equal parts.
  4. Take one portion in your palms and make it round and round and then flat.On chakla or rolling pin’s board dust flour and either with your fingers or with rolling pin make it round flat roti.
  5. Roast both the side of roti on griddle and then directly on flame. When you roast on flame, roti will blow up. At this time remove from the flame and with the help of steel spatula separate both layers of roti .
  6. Bajri roti is ready .Apply ghee or butter on both the layers.
  7. Serves hot with jaggery, stuffed vegetables and pickle or as you wish but served with love and smile.
  8. The same way you can make Jowar, Rice, Ragi or oats roti.
  9. For Bajra roti, mix flour with salt, carrom seeds and Sesame seeds.
  10. For Jowar roti, mix flour with salt, Cumin seeds and Sesame seeds.
  11. For Rice roti, mix flour with salt, Cumin seeds and Sesame seeds.
  12. For Ragi roti, mix flour with Salt, Carom seeds and Black Sesame seeds.
  13. For Oats roti, mix flour with Salt, Cumin seeds and Black Sesame seeds.

(59) Pizzasauce

Ingredients

  • 750 gms ( 8 medium size) tomatoes.
  • 1 medium size onion.
  • 1 tbsp. finely chopped garlic.
  • 1 tbsp.mix herbs.
  • 1 tbsp. olive oil.
  • 2 tsp. salt.
  • 1 tsp. chili powder.
  • 1 tsp.Sugar.

Method:

  1. Pierce knife in tomato and roast till skin separates from tomato directly on flame. Same process for all tomatoes and for onion till upper layer burnt.
  2. Remove skin of tomatoes and onion.
  3. Out of 8 ,4 deeseeded and finely chopped. Remaining of 4 tomatoes and onion make a paste.
  4. Heat oil in non-stick pan and saute garlic for 1 min. Add tomatoes and sugar in it and saute till it mashed.
  5. Add tomato onion puree, salt, mix herbs and chili powder in it.
  6. Smear for 5-7 mins till it becomes thick sauce like consistency.
  7. Pizzasauce is ready.

You can also enjoy this pizza sauce in preparation of tangy tomato pasta.

(34) Bhakhri

Make 8 bhakhri

Ingredients

  • 2 cup Wheat flour
  • OR
  • 1½ cup wheat flour+ ½ cup suji
  • OR
  • 1½ cup wheat flour+ ½ cup sieved lapsi flour.( lapsi flour is coarsely ground wheat flour like semolina- suji. Coarse whole wheat flour commonly known as ”jada atta” or ”churma lapsi atta”
  • ½ tsp. salt.
  • 60 ml. oil.
  • or
  • 4 tbsp oil.
  • 175 ml water.
  1. In mixing bowl mix all ingredients and knead a stiff dough. Keep aside for 10 -15 mins.
  2. Smear with little ghee and again knead to a smooth dough.
  3. Divide the dough into 8 equal portions.
  4. Roll  each dough ball into flat , round bhakhri.
  5. Preheat tawa on a medium flame.
  6. Roast both the sides,apply little ghee and press gently with wooden press till it turns light golden brown.
  7. Enjoy bhakhri with any vegetable curry, Jeggary and pickle.
  8. You can use bhakhri as pizza base and instead of slice bread in sandwiches.
