(197)Fusion Grill Sandwich

Ingredients

  • Sandwich Bread packet or Grill Sandwich Bread packet.
  • Butter packet.
  • Green chutney.
  • Tomato ketchup.
  • Filling for Exotic vegetables
  • Baby corn.( optional)
  • red bell pepper.
  • yellow bell pepper.
  • Mushroom.
  • 1 tbsp. Oil or Butter
  • ½ tsp. Salt…
  • 1 tsp. Mixed herbs.
  • 1 tsp. red chilli powder.
  • Filling of sweet corn
  • 1 cup Sweet corns.
  • 1 tbsp. butter.
  • ½ tsp. Salt.
  • ½ tsp. Black pepper powder.
  • Filling of Cheese
  • 200 gms. Cheese block.
  • Filling of onion and potato
  • 2 medium size Potatoes.
  • 1 medium size Onion.
  • 2 Garlic pods paste.
  • 1 medium size Tomato.
  • 1 tbsp. Oil.
  • ½ tsp. Mustard seeds.
  • ⅓ tsp. Asafoetida powder.
  • 8-10 Curry leaves.
  • ½ tsp. Salt.
  • ½ inch size grated Ginger.
  • 1 tsp. Red chilli powder
  • ½ tsp. Turmeric powder.
  • ½ tsp. Cumin Coriander powder.
  • 1 tsp. Garam masala.
  • 1 tbsp. finely chopped Coriander leaves.
  • Filling of Paneer.
  • 100 gms. fresh or cold storage Paneer.
  • 1 medium size Onion.
  • 1 medium size Tomato.
  • 1 tsp. garam masala.
  • 1 tsp. red chilli powder.
  • ½ tsp. Coriander Cumin powder.
  • ½ tsp. Turmeric powder.
  • 1 tsp. salt.
  • 1 tsp. Oil.
  • ½ tsp. Cumin seeds.
  • ⅓ tsp. Asafoetida powder.
  • 1 tbsp. finely chopped Coriander.

Method

  • Filling of Exotic vegetables.
  • Wash and cut all the vegetables into small pieces.
  • Heat oil or butter in nonstick pan or thick bottom pan.
  • Saute all cut vegetables on medium flame and stir continuously. Sufficiently saute so it is cooked but crunchy.
  • Mix thoroughly after adding salt, mixed herbs powder and red chilli powder .Keep aside.
  • Filling of Sweet corns.
  • Wash sweet corns and pressure cook upto 2 whistles.
  • Strain cooked corns immediately when pressure is releases and transfer into bowl.
  • Add butter, salt and black pepper powder in warm sweet corns.
  • Mix thoroughly and keep aside.
  • Filling of Cheese.
  • Grate cheese and keep aside.
  • Filling of Onion and Potato.
  • Wash and cook potatoes upto 2 whistles. When pressure is released open the lid and take out boiled potatoes. Remove skin and mash potatoes with potato masher. Mix half quantity of salt and keep aside.
  • Finely chop onions and keep aside.
  • Finely chop tomato and keep aside.
  • Heat oil in nonstick pan and add Mustard seeds.
  • Wait for crackling sound and add Asafoetida powder Curry leaves.
  • Add chopped onions. Saute till it becomes translucent.
  • Now add chopped tomato and saute till it becomes tender.
  • Mix salt, grated Ginger, Garlic paste thoroughly and now mix mashed potatoes and all other spices.
  • Close the lid and cook on slow flame for 2 minutes. Stir occasionally and filling is ready. Taste it and keep aside.
  • Filling of Paneer.
  • Grate paneer and keep aside.
  • Heat oil in nonstick pan and add Cumin seeds. Wait for crackling sound and add Asafoetida powder
  • Add finely chopped Onions. Saute till it becomes translucent and then add finely chopped Tomatoes. Saute till it becomes tender.Add all dry spices. Saute for 1 minute and mix grated Panner in it . Saute for one more minute and mix finely chopped Coriander leaves thoroughly. Keep aside.
  • All 5 fillings are now ready so arrange in one big plate so it will become easy to fill everything at a time.
  • Layering the each filling on bread
  • Grab 2 slices of bread. Cut all 4 borders of slices. ( Use these borders as a soup sticks after deep frying or roasting in oven ) Apply butter generously on one side of each slice and then Green chutney over it.
  • On one slice make a thin layer of potato onion filling.
  • Spread second layer of exotic vegetables.
  • Third layer of Sweet Corns.
  • Fourth layer of Paneer filling and final fifth layer of Cheese over it.
  • With the help of second slice cover the fillings.
  • Preheat the griller . Place the sandwich over it after greasing both the griller plate.
  • Check after every minute so no chances of burning the sandwich.
  • After 3- 4 minutes your Fusion Grill Sandwich will be ready for serving.
  • Serving of Fusion Grill Sandwich.
  • In serving plate serve green chutney and tomato ketchup ( both optional)
  • Fusion Grill Sandwich cut diagonally .
  • Enjoy home made Fusion Grill Sandwich with chilled home made squash.

(198)Tomato ketchup

Ingredients

  • 1 kg Red Tomatoes.
  • 1 tbsp. Oil.
  • ½ inch Cinnamon stick.
  • 6 whole Clove.
  • 6 whole Black pepper.
  • 1 Onion( optional).
  • 3 Garlic pods (optional).
  • 1½ tsp. Salt.
  • 3 tbsp. Sugar.
  • 1 tbsp. Red chilli powder.

Method

  1. Wash and cut each tomatoes into roughly 8 parts.
  2. Peel onion, wash and cut into roughly 8 parts.
  3. Cut Garlic pods into 2-4 parts.
  4. Heat oil in nonstick sauce pan.
  5. Soute Clove, Cinnamon stick and pepper corns for 30 seconds and add onion pieces, garlic and tomato pieces.
  6. Cook for 15 minutes on slow flame.
  7. Switch off the flame and once whole content has cooled down, grind into fine puree.
  8. Strain the puree and again heat to reduce water to get saucy consistency .Stir continuously otherwise it will stick to bottom of the pan.
  9. Store into air tight jar for 3-4 weeks in refrigerator.
  10. And if you want to store more, make cubes and store these cubes in deep freezer for 3-4 months.

Eggless Omlette

Ingredients

  • 1 cup Besan( Bengal gram dal flour).
  • ¾ cup water.
  • ½ cup finely chopped vegetables (Onions, tomatoes, coriander).
  • 1 tsp. ginger chilli paste.
  • 1 tsp. Turmeric powder.
  • 1 tsp. Red chilli powder.
  • 1 tsp. Coriander Cumin powder.
  • ¼ tsp. Asafoetida powder.
  • 1 ¼ tsp. Salt.
  • 1 tsp. backing Powder.

Method

  1. Finely chop coriander leaves , tomatoes, onions and keep aside.
  2. In big mixing bowl mix chopped veges and besan.
  3. Mix all spices and adjust the consistency by adding water. Taste the batter before any further process.
  4. Keep aside for 10 minutes .
  5. Heat nonstick tawa, pour ¾ cup batter and spread evenly ¼ cms. thick in circular motion.
  6. Pour melted butter at the periphery and ½ tsp. butter at the top of chila.
  7. Close the lid and cook for 2 minutes or till it is golden brown.
  8. Flip the side of r1 chila, close the lid and again cook for 2 minutes.
  9. Enjoy besan chila or eggless Omlette with bread , tomato sauce, green chutney or with Golkeri or amla murabba or as you wish

(146) Mixed Herbs Butter.

Ingredients

  • 100 gms. Amul butter.
  • 1tbsp.finely chopped fresh Parsley.
  • 1 tbsp. finely chopped fresh Basil.
  • ¼ tsp. Oregano powder.
  • ½ tsp. Chilli flakes ( optional)
  • 4 Garlic pods or 1 tbsp. green garlic paste.

Method

  1. Pluck leaves of Parsely from stalks.
  2. Wash leaves and finely chop. Keep aside.
  3. With the help of rolling pin crush Garlic pods into smooth paste. Keep aside.
  4. Bring butter to room temperature .
  5. In mixing bowl, mix all ingredients- butter, Parsely leaves, Oregano powder, Chilli flakes and Garlic paste.
  6. Mix well and refrigerate.
  7. It remains fresh for 6 months in freezer.
  8. Apply this butter on bread, bhakhri, roti, paratha, kulcha, chila, Idli, Dosa or as you wish.

(111) Garlic chutney

Ingredients

  • 1 cup Garlic pods.
  • 1 cup Desiccated coconut powder
  • ½ cup Sesame seeds
  • 2 tsp. Salt.
  • 2 tsp. Red chili powder.

Method

  1. Peel garlic pods.
  2. Dry roast Sesame seeds.Keep aside to cool down.
  3. when completely cool , grind sesame seeds into coarse powder. keep aside.
  4. Grind garlic pods, salt and red chili powder into fine paste.
  5. In big plate , mix garlic paste, sesame seeds coarse powder and coconut powder with hand.
  6. Garlic dry chutney is ready.
  7. Enjoy with your food .

Ingredients

  • ½ cup White Sesame seeds.
  • ¼ cup Olive oil.
  • ½ tsp. Salt.

Method

  1. Dry roast sesame seeds.
  2. After some times grind Sesame seeds when it is slightly warm.
  3. Grind into fine powder.
  4. Add salt and oil and again grind for getting smooth Tahini paste .
  5. Use Tahini paste for making salad dressing, hummus or as you desire.

  1. Prepare the batter following the instruction given on the pancake mix box.
  2. Pour the batter on dosa tawa either in stencil or round shape.
  3. Roast in butter or ghee .
  4. Serve hot with different toppings like nutella spread, honey, maple syrup, athana no sambhar for salty ,hot and tangy taste , golkeri for sweet and tangy taste or as your desire.

There are many readymade mix herbs are available in market but if you buy pure dry herbs and mix together all above in equal proportions at home then this magic bottle can turn any dish (Soup, salads, Sandwiches, veggies, pizza , pasta… endless possibilities) from blah to Wahh.

(34) Bhakhri

Make 8 bhakhri

Ingredients

  • 2 cup Wheat flour
  • OR
  • 1½ cup wheat flour+ ½ cup suji
  • OR
  • 1½ cup wheat flour+ ½ cup sieved lapsi flour.( lapsi flour is coarsely ground wheat flour like semolina- suji. Coarse whole wheat flour commonly known as ”jada atta” or ”churma lapsi atta”
  • ½ tsp. salt.
  • 60 ml. oil.
  • or
  • 4 tbsp oil.
  • 175 ml water.
  1. In mixing bowl mix all ingredients and knead a stiff dough. Keep aside for 10 -15 mins.
  2. Smear with little ghee and again knead to a smooth dough.
  3. Divide the dough into 8 equal portions.
  4. Roll  each dough ball into flat , round bhakhri.
  5. Preheat tawa on a medium flame.
  6. Roast both the sides,apply little ghee and press gently with wooden press till it turns light golden brown.
  7. Enjoy bhakhri with any vegetable curry, Jeggary and pickle.
  8. You can use bhakhri as pizza base and instead of slice bread in sandwiches.
