(279) Liquid Diet Menu.

Liquid diets are classified as Watery Soups, Thick Soups, Smoothies, Tea, Coffee, Gruels, Porridge, Milkshakes. Which is not always for weight loss. Sometimes doctors prescribe a liquid diet for some special conditions like accident cases and tooth extraction cases. Sometimes in deficiency of minerals and vitamins cases doctors prescribe some special liquid diet. So the  following menu shows all types of liquid food. For weight gain or loss or to increase immunity or help in deficiency etc.

Definitions or meanings of some terms

  • Osaman means watery soups.
  • Kheer means porridge. Which is always prepared along with milk, Sugar or Jaggery and grains or vegetables.
  • Rab means gruel. Which is prepared with flour, water, some spices and sugar/jaggery.
  • Thick Soups means thick consistency either with the help of cornflour, arrowroot, chickpea flour, all purpose flour, moong flour or grinding some portion of vegetables.
  • Milkshakes means drink prepared with milk and/or ice cream, fruits and/or flavoured syrups.
  • Smoothies means drink prepared with fruits and/or vegetables, milk and/or curd and sugar or maple syrup or honey or jaggery.

Ingredients

Method

  1. Wash and pluck holy basil leaves and mint leaves from its stalk and keep aside.
  2. Wash lemongrass leaf and cut it into small pieces and keep aside.
  3. Wash and grate ginger and keep aside.
  4. In mortar mortar and pestle break all dry ingredients into small pieces.
  5. In a saucepan boil water with dry as well as green ingredients for 5 minutes on slow flame. If you have ukalo ready mix powder then use 1 tsp. ready mix powder in 2 cups along with green ingredients like Basil, Lemongrass and Phudina and do not use ginger with ready mix as it contains Ginger powder.
  6. After 5 minutes add milk and sugar and again give 4- 5 boils on slow flame.
  7. Serve hot with dry snacks like namakpare, sakkarpara or as you wish

(165) Moong Osaman

Ingredients

  • ¼ cup Whole moong or strained water of cooked moong while preparing khata Moong.
  • 2 cup water.
  • 1 tsp. grated ginger.
  • 1 finely chopped green chilli(optional)
  • 1 tsp. Salt.
  • 2 Kokum or 1 tsp. lemon juice.
  • Tempering Ingredients ( Vaghar)
  • 1 tsp. Desi ghee.
  • 1 tsp. Cumin seeds.
  • ¼ tsp. Asafoetida powder.
  • 2 Clove.
  • ½ inch piece of Cinnamon.
  • 8-10 Curry leaves.
  • 1 tbsp chopped coriander leaves.

Method

  1. If you have strained water of cooked moong then use directly by adding 2 cup water and other ingredients.
  2. But if you prepare from the  moong then wash moong 2-3 times.
  3. Pressure cook upto 3 whistles after adding salt and turmeric powder.
  4. When pressure releases, remove moong pan from cooker and grind entire content and strain with strainer.
  5. In strained liquid add remaining ingredients and vaghar .
  6. Give 3-4 boil and taste the dish before serving.
  7. Serve hot. Serve with love and smile.
  8. Moong osaman is ideal drink for patients suffering from any of the illnesses.

(205)Immunity booster Tea

Ingredients

  • 2 cup water.
  • ½ inch grated Turmeric or ¼ tsp. Turmeric powder
  • ½ inch grated Ginger or ¼ tsp. Ginger powder.
  • 1 freshly ground Cardamom with skin
  • 1 freshly ground clove
  • 2 freshly ground Black pepper.
  • ¼ inch freshly crushed Cinnamon stick.
  • 1 freshly cut Bay leaf.

Method

  1. In tea pan mix water with all dry ingredients.
  2. Boil for 5 minutes.
  3. Strain and serve hot.
